Description

A colorful, hearty salad combining caramelized honey-roasted sweet potatoes, lightly crisp chickpeas, creamy avocado, refreshing cucumber, tangy feta, sweet dried cranberries, and a bright honey lemon dressing. Perfect for a light lunch, side dish, or Mediterranean-inspired meal.

Ingredients

For the Roasted Sweet Potato & Chickpeas

2 large sweet potatoes (about 600 g), peeled and cut into bite-sized cubes

1 can (15 oz / 425 g) chickpeas, drained, rinsed, and patted dry

2 tbsp olive oil

1 tbsp honey

1/2 tsp smoked paprika

1/2 tsp garlic powder

1/2 tsp ground cumin

1/2 tsp dried oregano

1/2 tsp salt

1/4 tsp black pepper

For the Salad

1 large cucumber (about 200 g), diced

1 large avocado, diced

1/2 cup (75 g) dried cranberries

3/4 cup (110 g) crumbled feta cheese

1/4 cup (15 g) fresh parsley, chopped

2 tbsp fresh mint, chopped

For the Honey Lemon Dressing

3 tbsp extra-virgin olive oil

1 1/2 tbsp fresh lemon juice

1 tbsp honey

1 tsp Dijon mustard

1/2 tsp apple cider vinegar

1/2 tsp dried oregano

1/4 tsp salt

1/4 tsp black pepper

Instructions

1. Preheat the oven to 425°F (220°C) and line a large baking sheet with parchment paper.

2. Place the sweet potato cubes and chickpeas in a large bowl. Add olive oil, honey, smoked paprika, garlic powder, cumin, oregano, salt, and black pepper.

3. Toss thoroughly until the sweet potatoes and chickpeas are evenly coated with the seasoning mixture.

4. Spread the seasoned sweet potatoes and chickpeas across the prepared baking sheet in a single layer, leaving space between the pieces.

5. Roast for 30–35 minutes, stirring halfway through, until the sweet potatoes are tender and caramelized and the chickpeas are lightly crisp.

6. Remove from the oven and let the roasted vegetables cool for 5–10 minutes.

7. While the vegetables roast, dice the cucumber and avocado. Chop the fresh parsley and mint, keeping the avocado pieces reasonably large so they hold their shape.

8. Make the dressing by whisking together the extra-virgin olive oil, lemon juice, honey, Dijon mustard, apple cider vinegar, oregano, salt, and black pepper until smooth and emulsified.

9. Add the roasted sweet potatoes and chickpeas to a large serving bowl.

10. Add the cucumber, avocado, dried cranberries, crumbled feta, parsley, and fresh mint.

11. Drizzle the honey lemon dressing evenly over the salad just before serving.

12. Gently toss everything together until lightly coated, taking care not to mash the avocado or break up the feta.

13. Garnish with extra feta, dried cranberries, and fresh mint. Add a very light drizzle of honey if desired.

14. Serve warm, slightly chilled, or at room temperature as a hearty vegetarian lunch, colorful side dish, or Mediterranean-inspired meal.

Notes

Pat the chickpeas thoroughly dry before roasting to help them develop better texture. Do not overcrowd the baking sheet. Leave space between the sweet potatoes and chickpeas so they caramelize instead of steaming. Cut the sweet potatoes into similar-sized cubes so they cook evenly. Add the avocado near the end and toss gently to prevent it from becoming mashed. Dress the salad just before serving to keep the cucumber crisp and prevent the salad from becoming soggy. Use fresh lemon juice for a brighter and cleaner-tasting dressing. Adjust the amount of honey depending on the sweetness of the sweet potatoes and dried cranberries. The roasted sweet potatoes and chickpeas can be prepared ahead and refrigerated. Keep the dressing separate and add the avocado shortly before serving. Goat cheese can be substituted for feta. Crumbled cotija or another salty crumbly cheese can also work. Raisins, dried cherries, or chopped dried apricots can replace the dried cranberries. Dice the avocado shortly before serving and toss it with a little fresh lemon juice to help slow browning. The salad can be served slightly chilled or at room temperature. For a more substantial meal, serve with warm pita bread, quinoa, couscous, or grains. Extra chickpeas or another plant-based protein can be added for a heartier meal. For entertaining, serve the salad on a large shallow platter with the feta, avocado, cranberries, and fresh herbs scattered over the top. This salad pairs well with grilled chicken, roasted fish, or other Mediterranean-inspired dishes.
