How to Freeze Steak Properly: Tips for Freshness and Quality
1. Use the Right Materials
Do not simply leave your steak in a plastic bowl uncovered in the freezer. This will not help maintain its quality, as the meat will be exposed to harsh, dry freezer air, which can lead to freezer burn, discolouration, and a loss of flavour. To effectively prevent the harsh air from affecting the steak’s quality, it is important to cover it with multiple layers of protection—preferably two. This can be any combination of plastic wrap, aluminium foil, zip-top bags, silicone bags, or freezer paper.
The first layer of protection can be plastic wrap or aluminium foil wrapped tightly around the steak. If you frequently prepare steaks, consider investing in a vacuum sealer, which removes air completely and provides excellent protection. The first layer shields the steak from frost, but to really keep freezer air at bay, a second barrier is needed—and it must be airtight. The best option is a zip-lock bag; you can use a single-use plastic bag or a reusable silicone one. Another option is freezer paper, though it may not seal out air as effectively. If you are using freezer paper, you will still need to tape it all around to keep it airtight.
2. How to Wrap Steak Properly
Begin by laying out the foil or plastic wrap on a flat surface with the steak placed at the centre. Fold the foil securely around the steak, ensuring it is completely covered. Then, slip the wrapped steak into the second layer of protection—a zip-lock bag or freezer paper. To ensure everything is airtight, nestle the wrapped steak into the bottom of the bag. Zip the bag until you have a finger’s width open at one corner. Gently fold the bag and push the air out through that open corner. Once most of the air has been removed, seal the bag completely. Place the steak in the freezer, keeping it in a flat position if possible, so it will not become misshapen upon thawing.
