Italian Pesto Pasta Salad with Feta, Avocado, Cherry Tomatoes & Toasted Pine Nuts

Description

A fresh and colourful Mediterranean-inspired pasta salad made with tender rotini, juicy cherry tomatoes, creamy avocado, salty feta, Kalamata olives, fresh basil, toasted pine nuts, and a bright homemade pesto dressing.

Ingredients

For the Pasta Salad

12 oz (340 g) rotini or fusilli pasta

1 cup (150 g) cherry tomatoes, halved

1 large avocado, diced

3/4 cup (110 g) crumbled feta cheese

1/3 cup (45 g) toasted pine nuts

1/3 cup (50 g) Kalamata olives, pitted and sliced

1/4 small red onion, thinly sliced

1/4 cup (15 g) fresh basil leaves, chopped

For the Pesto Dressing

1/2 cup (120 g) basil pesto

2 tbsp extra-virgin olive oil

1 tbsp fresh lemon juice

1 tsp honey

1 small garlic clove, finely minced

1/4 tsp black pepper

Pinch of salt

Instructions

1. Bring a large pot of generously salted water to a boil. Cook the rotini or fusilli according to the package directions until al dente.

2. Drain the pasta well and rinse briefly under cool water to stop the cooking process. Let it drain thoroughly so excess water does not dilute the pesto dressing.

3. Place the pine nuts in a dry skillet over medium-low heat. Toast for 2–3 minutes, stirring frequently, until lightly golden and fragrant. Transfer them immediately to a plate to cool.

4. In a small bowl, whisk together the basil pesto, extra-virgin olive oil, fresh lemon juice, honey, minced garlic, black pepper, and a pinch of salt until smooth and well combined.

5. Halve the cherry tomatoes, dice the avocado, thinly slice the red onion, and slice the Kalamata olives. Keep the avocado pieces slightly larger so they hold their shape when tossed.

6. Add the cooled and well-drained pasta to a large serving bowl. Add the cherry tomatoes, diced avocado, crumbled feta, Kalamata olives, red onion, and chopped fresh basil.

7. Pour the pesto dressing over the pasta mixture and toss gently until the pasta and vegetables are evenly coated.

8. Sprinkle the toasted pine nuts over the salad and gently fold them through. Reserve a small handful for the top.

9. Cover the salad and refrigerate for 20–30 minutes to allow the pasta to absorb the pesto flavours while keeping the vegetables fresh.

10. Before serving, garnish with the reserved toasted pine nuts, fresh basil, and additional feta if desired.

11. Serve chilled or slightly cool. If the salad has been refrigerated for longer, give it a gentle toss and add a small splash of olive oil if needed.

Notes

Cook the pasta al dente so it holds its texture after chilling and tossing with the dressing.

Drain the pasta thoroughly and rinse briefly with cool water to prevent it from becoming too soft.

Toast the pine nuts carefully because they can burn quickly.

Add the avocado gently and keep the pieces slightly larger so they do not become mashed.

Use fresh lemon juice for a brighter pesto dressing.

Start with the suggested amount of dressing and add more pesto or olive oil later if needed.

Chill the salad for 20–30 minutes so the pasta can absorb the pesto flavours.

For the freshest appearance, add the avocado shortly before serving if preparing the salad ahead.

Penne, farfalle, fusilli, or other short pasta shapes can be used instead of rotini.

Toasted walnuts, almonds, or pecans can replace the pine nuts.

Fresh mozzarella, goat cheese, or Parmesan can be used instead of feta.

For a more filling meal, add grilled chicken, chickpeas, or white beans.

Store leftovers in an airtight container in the refrigerator and enjoy within 2–3 days for the best texture and flavour.
