Ingredients
1 lb (450 g) fresh cheese or spinach ravioli
2 tablespoons olive oil
2 garlic cloves, minced
3 cups fresh spinach, roughly chopped
1 cup marinated artichoke hearts, quartered
1/4 cup capers, drained
1/2 cup sun-dried tomatoes in oil, thinly sliced
1/2 cup vegetable or chicken broth
1/3 cup heavy cream (optional)
1/3 cup grated Parmesan cheese
1 teaspoon Italian seasoning
Salt and freshly ground black pepper, to taste
2 tablespoons fresh basil, chopped
Lemon wedges, for serving
Instructions
Bring a large pot of salted water to a boil and cook the ravioli according to the package directions until tender.
Drain carefully and set aside.
Heat the olive oil in a large skillet over medium heat.
Add the garlic and cook for about 30 seconds until fragrant.
Stir in the artichoke hearts, capers, sun-dried tomatoes, and Italian seasoning.
Cook for 3 to 4 minutes, stirring occasionally.
Add the spinach and cook until just wilted.
Pour in the broth and, if desired, the heavy cream.
Simmer gently for 2 to 3 minutes.
Add the cooked ravioli to the skillet.
Sprinkle with the Parmesan cheese and gently toss until everything is evenly coated.
Season with salt and black pepper to taste.
Finish with fresh basil and serve immediately with lemon wedges and extra Parmesan if desired.
Notes
Cook the ravioli gently to prevent them from breaking.
The heavy cream is optional but creates a richer, silkier sauce.
Fresh lemon juice adds brightness and balances the rich flavors.
Store leftovers in the refrigerator for up to 3 days and reheat gently with a splash of broth if needed.
Serve with garlic bread or a crisp green salad for a complete Mediterranean-inspired meal.
