Description

Keto Crispy Reuben Roll-Ups are a quick, savoury twist on the classic Reuben sandwich. Swiss cheese, deli corned beef, tangy sauerkraut and sugar-free Thousand Island dressing are rolled together, then cooked until the cheese becomes golden and crisp around the edges.


Ingredients

8 slices Swiss cheese

8 slices deli corned beef

1/2 cup sauerkraut, drained very well

2 tablespoons sugar-free Thousand Island dressing

1 tablespoon butter or olive oil, for cooking

1/2 teaspoon garlic powder

1/4 teaspoon black pepper

Fresh parsley, optional, for garnish


Instructions

Drain the sauerkraut thoroughly, then gently squeeze out any remaining liquid.

Place one slice of Swiss cheese on a flat work surface and top it with a slice of corned beef.

Add a small line of well-drained sauerkraut down the centre, followed by a little sugar-free Thousand Island dressing.

Carefully roll the cheese and corned beef around the filling to create a compact cylinder. Keep the sauerkraut and dressing tucked inside as you roll. Repeat with the remaining ingredients.

Place the assembled roll-ups seam-side down and refrigerate for 10 minutes.

Heat the butter or olive oil in a non-stick skillet over medium heat.

Place the roll-ups seam-side down in the skillet. Cook for 2–3 minutes per side, turning them gently, until the cheese is golden and crisp around the edges.

Remove the crispy roll-ups from the skillet and sprinkle lightly with garlic powder and black pepper.

Garnish with fresh parsley if desired.

Serve immediately while the cheese is warm and crisp. Add extra sugar-free Thousand Island dressing or sauerkraut on the side if desired.

Notes

Drain the sauerkraut very well to prevent excess moisture from making the roll-ups soggy.

Don’t overfill the roll-ups, as a small amount of sauerkraut and dressing is enough.

Chill the assembled roll-ups briefly before cooking to help them hold their shape.

Use medium heat so the cheese can become golden and crisp without cooking too aggressively.

Turn the roll-ups gently with tongs or a spatula.
