Ingredients
8 slices Swiss cheese
8 slices deli corned beef
1/2 cup sauerkraut, well drained and squeezed dry
2 tablespoons sugar-free Thousand Island dressing
1 teaspoon caraway seeds (optional)
1 teaspoon garlic powder
1/2 teaspoon freshly ground black pepper
Fresh parsley, chopped, for garnish
Instructions
Preheat the oven to 400°F (200°C) and line a baking tray with parchment paper.
Arrange the Swiss cheese slices on the prepared tray, leaving space between each slice.
Bake for 5 to 7 minutes until melted, bubbling, and lightly golden around the edges.
Allow the cheese to cool for about 1 minute until flexible.
Top each cheese slice with one slice of corned beef.
Add about 1 tablespoon of well-drained sauerkraut to each.
Drizzle lightly with sugar-free Thousand Island dressing.
Sprinkle with caraway seeds (if using), garlic powder, and black pepper.
Carefully roll each cheese slice tightly around the filling.
Place seam-side down on the baking tray.
Bake for another 3 to 5 minutes until crisp and golden.
Garnish with fresh parsley and serve warm with extra dressing for dipping if desired.
Notes
Drain and squeeze the sauerkraut very well to prevent soggy roll-ups.
Allow the cheese to cool slightly before rolling so it stays flexible.
Serve immediately for the crispiest texture.
Great paired with a fresh green salad or roasted low-carb vegetables.
Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat in the oven or air fryer until crispy.
