Ingredients

For the Vegetables:

2 cups pumpkin (thinly sliced or roasted)

2 large sweet potatoes, thinly sliced lengthwise

2 cups fresh spinach

2 tablespoons olive oil

Salt and black pepper, to taste

1/2 teaspoon nutmeg or paprika

For the Base:

1 1/2 cups marinara sauce or light béchamel

For the Whipped Ricotta:

200 g ricotta cheese

2–3 tablespoons cream or milk

1 tablespoon olive oil

Pinch of salt and black pepper

For the Brown Butter:

3 tablespoons butter

6–8 sage leaves (optional)

Optional:

Grated Parmesan cheese

Chili flakes

Instructions

Preheat the oven to 400°F (200°C).

Toss pumpkin and sweet potato slices with olive oil, salt, pepper, and nutmeg or paprika.

Spread on a baking sheet and roast for 20–25 minutes until slightly tender.

In a skillet, sauté spinach until wilted and set aside.

In a bowl or blender, combine ricotta, cream or milk, olive oil, salt, and pepper.

Blend or whisk until smooth and creamy.

Reduce oven temperature to 375°F (190°C).

Spread a thin layer of marinara or béchamel in a baking dish.

Layer sweet potatoes, pumpkin, spinach, and whipped ricotta.

Repeat layers until all ingredients are used.

Finish with sauce and Parmesan if desired.

Cover with foil and bake for 30–35 minutes.

Remove foil and bake for 10–15 minutes until golden and bubbling.

In a small pan, melt butter over medium heat.

Cook until golden brown and nutty.

Add sage leaves if using and cook for 1–2 minutes.

Drizzle brown butter over lasagna.

Sprinkle with chili flakes if desired.

Let rest slightly before serving.

Notes

Slice vegetables thinly for even layers.

Do not over-roast vegetables before baking.

Use high-quality ricotta for best texture.

Watch butter carefully to avoid burning.

Let lasagna rest before slicing for cleaner layers.
