2 medium eggplants, thinly sliced lengthwise (600 g)

1 tsp garlic powder (3 g)
1 tsp dried oregano (1 g)
½ tsp smoked paprika (1 g)
¾ tsp kosher salt (4 g)

For the Whipped Feta
1½ cups crumbled feta cheese (225 g)
½ cup Greek yogurt (120 g)
1 tbsp olive oil (15 ml)
1 tbsp fresh lemon juice (15 ml)
1 garlic clove, minced (3 g)
1 tbsp fresh parsley, chopped (4 g)
1 tbsp fresh dill, chopped (3 g)
For the Cranberry Honey Drizzle
½ cup dried cranberries (75 g)
3 tbsp honey (63 g)
1 tbsp balsamic vinegar (15 ml)
1 tbsp fresh orange juice (15 ml)
1 tsp Dijon mustard (5 g)
1 tbsp olive oil (15 g)
For the Walnut Topping
¾ cup walnuts, roughly chopped (85 g)
1 tbsp honey (21 g)
½ tsp dried rosemary (0.5 g)
For Garnish
1 tbsp fresh parsley, chopped (4 g)
1 tbsp fresh thyme leaves (3 g)
1 tbsp pomegranate arils (15 g)
Instructions
1. Preheat the oven to 425°F (220°C). Line two large baking sheets with parchment paper. Arrange the thinly sliced sweet potatoes and eggplant across the prepared sheets, keeping them in a single layer as much as possible.
2. Brush both sides of the sweet potatoes and eggplant with olive oil, then season evenly with garlic powder, dried oregano, smoked paprika, kosher salt, and black pepper.
3. Roast the vegetables for 20–25 minutes, turning halfway through, until tender and lightly caramelised. Remove from the oven and allow them to cool slightly.
4. Make the whipped feta by adding the feta, Greek yogurt, olive oil, lemon juice, minced garlic, parsley, and dill to a food processor. Blend for 1–2 minutes, scraping down the sides as needed, until smooth and creamy.
5. Prepare the walnuts by placing them in a dry skillet over medium heat. Toast for 3–4 minutes, stirring frequently.
6. Add the honey and dried rosemary to the toasted walnuts and cook for another 1 minute, stirring constantly until lightly glazed. Remove from the heat and set aside to cool.
7. Make the cranberry honey drizzle by combining the dried cranberries, honey, balsamic vinegar, orange juice, Dijon mustard, and olive oil in a small saucepan.
8. Warm the cranberry mixture over low heat for 4–5 minutes, stirring occasionally, until the cranberries soften and the mixture becomes glossy.
9. Lightly grease a small baking dish with olive oil. Arrange a layer of roasted sweet potato slices across the bottom, slightly overlapping them to create an even base.
10. Spread a layer of whipped feta over the sweet potatoes. Add a layer of roasted eggplant followed by another layer of whipped feta.
11. Continue alternating the roasted sweet potato, eggplant, and whipped feta layers until the ingredients are used, finishing with a layer of roasted vegetables on top.
12. Cover the baking dish loosely with foil and bake at 375°F (190°C) for 15–20 minutes, until the lasagna is heated through.
13. Remove the foil and return the dish to the oven for another 5 minutes to lightly caramelise the top.
14. Remove the lasagna from the oven and let it rest for 10 minutes so the layers can settle.
15. Warm the cranberry honey mixture gently if needed, then drizzle it over the top and around the lasagna.
16. Scatter the honey-glazed walnuts over the surface and garnish with fresh parsley, thyme, and pomegranate arils if desired.
17. Serve warm, making sure each portion gets roasted vegetables, whipped feta, cranberry drizzle, and crunchy walnuts.
Notes
Slice the sweet potatoes and eggplant evenly so they roast consistently and form neat layers.
Do not overcrowd the baking trays; give the vegetables enough space to develop lightly caramelised edges.
Blend the feta mixture thoroughly until smooth and creamy for an even texture between the layers.
Watch the walnuts closely during the final minute because honey can caramelise quickly.
Keep the cranberry drizzle separate until serving to preserve the contrast between the warm vegetables and glossy topping.
Allow the glazed walnuts to cool before adding them so they maintain their crunch.
The roasted vegetables, whipped feta, cranberry mixture, and walnuts can be prepared separately ahead of serving.
Keep prepared components covered and refrigerated where appropriate, then assemble and warm the lasagna before serving.
A 10-minute resting period helps the layers settle and makes the lasagna easier to portion.
Adjust the amount of honey in the cranberry drizzle if you prefer a less sweet finish.
Serve with a simple green salad, roasted vegetables, or warm bread for a larger meal.
