Description
A stunning layered vegetable bake with thinly sliced zucchini, yellow squash, and sweet potato roasted until caramelized, topped with feta, walnuts, and a herb honey glaze—a showstopper side dish or vegetarian main!
Ingredients
2 medium zucchini, sliced into thin rounds
2 medium yellow squash, sliced
2 medium sweet potatoes, peeled and thinly sliced
2 tbsp (30 ml) olive oil (for vegetables)
1 tsp salt
½ tsp black pepper
1 tsp dried oregano
1 tsp dried thyme
Âľ cup (120 g) feta cheese, crumbled
½ cup (60 g) walnuts, roughly chopped
3 tbsp (45 ml) honey
1 tbsp olive oil (for glaze)
1 tsp fresh thyme leaves
½ tsp chili flakes (optional)
Fresh thyme, to garnish
Cracked black pepper, to garnish
Instructions
1. Preheat the oven to 400°F (200°C). Lightly grease a 9-inch round or oval baking dish with olive oil.
2. Slice the zucchini, yellow squash, and peeled sweet potatoes into uniform rounds about ÂĽ inch (5mm) thick.
3. Arrange the slices in the baking dish in an alternating overlapping pattern—zucchini, yellow squash, sweet potato, repeat—either in straight rows or a spiral.
4. Drizzle with olive oil and season evenly with salt, black pepper, dried oregano, and dried thyme.
5. Cover loosely with foil and bake for 25 minutes. Remove the foil and continue baking for 10–15 more minutes until vegetables are tender and edges caramelized (35–40 minutes total).
6. While the vegetables roast, whisk together the honey, olive oil, fresh thyme leaves, and chili flakes (if using) in a small bowl to make the glaze.
7. Remove the dish from the oven and sprinkle the crumbled feta and chopped walnuts evenly across the top.
8. Drizzle the herb honey glaze generously over the feta and walnuts.
9. Return to the oven for 5–7 minutes until the feta softens slightly and the walnuts toast.
10. Garnish with fresh thyme leaves and cracked black pepper. Serve warm directly from the baking dish.
Notes
Slice all vegetables to the same thickness (ÂĽ inch) for even cooking.
A mandoline slicer makes uniform slicing fast and easy.

Use room-temperature feta so it softens beautifully when added.
