Loaded Crispy Sweet Potatoes with Whipped Feta, Avocado & Hot Honey Walnuts combines deeply roasted sweet potatoes with creamy whipped feta, buttery avocado, and crunchy walnuts coated in sweet and spicy hot honey for a colourful and satisfying vegetarian dish.
Ingredients
2 large sweet potatoes (about 700 g), scrubbed and cut into bite-sized wedges
2 tbsp olive oil
1 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp ground cumin
1/2 tsp salt
1/4 tsp black pepper
6 oz (170 g) feta cheese, crumbled
1/3 cup (80 g) Greek yogurt
1 tbsp olive oil
1 tbsp fresh lemon juice
1 small garlic clove, minced
1–2 tbsp water, as needed
1/2 cup (60 g) walnuts, roughly chopped
2 tbsp hot honey
1/2 tsp red pepper flakes, optional
Pinch of salt
1 ripe avocado, diced
2 tbsp finely chopped fresh parsley
2 tbsp sliced green onions
1 tbsp fresh lemon juice
1/4 tsp black pepper
Instructions
1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper. A properly heated oven helps the sweet potatoes develop deeply browned, crispy edges while staying tender inside.
2. Place the sweet potato wedges in a large bowl. Add the olive oil, smoked paprika, garlic powder, ground cumin, salt, and black pepper. Toss thoroughly until every piece is evenly coated with the oil and seasonings.
3. Spread the seasoned sweet potatoes over the prepared baking sheet in a single layer, leaving space between the pieces. Roast for 30–40 minutes, turning the wedges halfway through cooking, until tender in the centre and deeply golden and crispy around the edges.
4. While the sweet potatoes roast, add the feta, Greek yogurt, olive oil, fresh lemon juice, and minced garlic to a food processor. Blend for 1–2 minutes until smooth and creamy. If the mixture is too thick, add water a little at a time until it reaches a soft, spreadable consistency.
5. Place the chopped walnuts in a dry skillet over medium-low heat. Toast for 2–3 minutes, stirring frequently, until fragrant and lightly golden. Reduce the heat to low and drizzle in the hot honey. Add the red pepper flakes and a pinch of salt. Stir for 30–60 seconds until the walnuts are glossy and evenly coated. Remove from the heat and let them cool slightly.
6. Dice the ripe avocado and place it in a small bowl. Gently toss with the fresh lemon juice and black pepper to add brightness and help slow browning.
7. Spoon the whipped feta onto a large serving platter and spread it into a generous creamy layer. Arrange the hot crispy roasted sweet potatoes over the feta, leaving some of the whipped feta visible around the edges.
8. Scatter the diced avocado evenly over the warm sweet potatoes so each serving gets a combination of sweet potato, feta, and avocado.
9. Sprinkle the hot honey walnuts generously over the top. Their crunchy texture and sweet-spicy coating provide a delicious contrast to the soft sweet potatoes, creamy feta, and avocado.
10. Finish with chopped fresh parsley and sliced green onions. If desired, add another light drizzle of hot honey for extra sweetness and heat.
11. Serve immediately while the sweet potatoes are hot and crispy, the whipped feta is creamy, and the walnuts still have their crunch.
Notes
Don’t overcrowd the baking sheet. Give the sweet potato wedges enough room so hot air can circulate and help them crisp.
Cut the sweet potatoes into evenly sized wedges so they cook evenly and finish at the same time.
Use a light, even coating of olive oil to help the edges brown beautifully without making the potatoes greasy.
Turn the sweet potato wedges halfway through roasting so multiple sides become golden and crisp.
Toast the walnuts gently over medium-low heat to develop their flavour without burning them.
Keep the skillet on low heat when adding the hot honey so it coats the walnuts without scorching.
Assemble the dish just before serving to keep the sweet potatoes crisp and the walnuts crunchy.
The whipped feta can be prepared ahead of time and stored covered in the refrigerator. Let it sit out briefly before serving so it becomes easier to spread.
Regular honey can be substituted for hot honey. Add a pinch of red pepper flakes or chili seasoning if you want to bring back some heat.
Pecans are an excellent substitute for walnuts and pair beautifully with sweet potatoes, feta, and honey.
You can prepare the whipped feta, walnuts, and seasoned sweet potatoes ahead of time. For the best texture, roast the sweet potatoes and assemble the platter shortly before serving.
Toss diced avocado gently with fresh lemon juice immediately after cutting to help slow browning.
