Ingredients

For the Sweet Potatoes

• 4 medium sweet potatoes (about 900 g)
• 2 tbsp olive oil
• 1/2 tsp garlic powder
• 1/2 tsp smoked paprika
• 1/2 tsp dried oregano
• 1/2 tsp salt
• 1/4 tsp black pepper

For the Sautéed Spinach & Mushrooms

• 8 oz (225 g) mushrooms, sliced
• 5 oz (140 g) fresh baby spinach
• 1 tbsp olive oil
• 2 garlic cloves, minced
• 1/2 tsp dried oregano
• 1/4 tsp salt
• 1/4 tsp black pepper

For the Whipped Feta

• 6 oz (170 g) feta cheese, crumbled
• 1/3 cup (80 g) Greek yogurt
• 1 tbsp olive oil
• 1 tbsp fresh lemon juice
• 1 small garlic clove, minced
• 1–2 tbsp water, as needed

For the Toppings

• 1 large avocado, diced
• 2 tbsp fresh parsley, chopped
• 1 tbsp fresh dill, chopped
• 1/2 tsp dried oregano
• 1/4 tsp red pepper flakes, optional
• 1 tsp lemon zest

How to Make It

1. Prepare the Sweet Potatoes

Preheat your oven to 425°F (220°C). Wash and scrub the sweet potatoes thoroughly. Cut each one in half lengthwise and lightly score the flesh with a knife.

2. Season the Sweet Potatoes

Brush the cut sides with olive oil. Sprinkle with garlic powder, smoked paprika, dried oregano, salt, and black pepper, making sure the seasoning is distributed evenly.

3. Roast Until Tender

Place the sweet potatoes cut-side down on a parchment-lined baking sheet. Roast for 35–45 minutes, until the flesh is completely tender and the edges are deeply golden and caramelized.

4. Make the Whipped Feta

While the sweet potatoes roast, add the feta, Greek yogurt, olive oil, lemon juice, and minced garlic to a food processor. Blend for 1–2 minutes until smooth and creamy. Add a little water, one tablespoon at a time, if needed to achieve a soft, spreadable consistency.

5. Cook the Mushrooms

Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add the sliced mushrooms and cook for 5–7 minutes, stirring occasionally, until they are deeply browned and most of their moisture has evaporated.

6. Add the Spinach

Add the minced garlic, dried oregano, salt, and black pepper to the mushrooms. Stir for about 30 seconds, then add the baby spinach. Cook for 1–2 minutes, stirring gently, until the spinach is wilted. Remove from the heat.

7. Prepare the Avocado

Dice the avocado just before assembling the sweet potatoes. Toss it gently with a small splash of fresh lemon juice to help keep it fresh and add a little brightness.

8. Fluff the Sweet Potatoes

Remove the roasted sweet potatoes from the oven. Using a fork, gently loosen some of the flesh while keeping the skins intact. This creates a soft base for the toppings while preserving the roasted potato shape.

9. Add the Whipped Feta

Spoon a generous layer of whipped feta over each roasted sweet potato half. Spread it gently across the warm surface.

10. Add the Sautéed Vegetables

Top each sweet potato with the warm sautéed mushrooms and spinach. Distribute the vegetables evenly so every serving has plenty of the savoury filling.

11. Add the Avocado

Scatter the diced avocado over the mushrooms and spinach. The cool, creamy avocado creates a lovely contrast with the warm roasted sweet potato and vegetables.

12. Garnish

Finish with fresh parsley, dill, lemon zest, and a sprinkle of dried oregano. Add red pepper flakes if you want a subtle spicy kick.

13. Serve

Serve immediately while the sweet potatoes are warm, the whipped feta is creamy, the mushrooms are savoury, and the spinach is freshly sautéed.

Why This Recipe Works

This recipe combines several contrasting textures and flavours in one satisfying dish. The roasted sweet potatoes are naturally sweet and caramelized, while the whipped feta provides a creamy, tangy, and savoury element.

Golden mushrooms add earthy richness, while wilted spinach brings freshness and colour. The avocado adds another layer of creaminess, and fresh lemon zest and herbs keep the finished dish bright rather than heavy.

It’s also a great example of how a few simple toppings can transform roasted sweet potatoes into a complete and satisfying vegetarian meal.

Tips for the Best Loaded Sweet Potatoes

• Choose similar-sized potatoes: This helps them roast at the same rate.
• Don’t overcrowd the baking sheet: Give the sweet potatoes enough room to caramelize properly.
• Brown the mushrooms well: Let their moisture cook away so they develop a deeper, richer flavour.
• Blend the feta thoroughly: A full 1–2 minutes of blending creates a much smoother and creamier texture.
• Add avocado last: This keeps it fresh, creamy, and vibrant.
• Use fresh lemon zest: A little zest adds a bright finish that balances the sweetness of the potatoes.
• Serve immediately: The contrast between warm sweet potatoes, creamy feta, sautéed vegetables, and cool avocado is best when served fresh.

Serving Suggestions

These loaded sweet potatoes make a satisfying vegetarian lunch or dinner on their own. Serve them with a simple green salad, cucumber salad, roasted vegetables, or warm crusty bread for a complete meal.

They also work beautifully as a colourful side dish for grilled chicken, roasted fish, or other Mediterranean-inspired dishes. For a heartier option, add chickpeas, lentils, or another favourite plant-based protein.

Frequently Asked Questions

Can I prepare the sweet potatoes ahead of time?

Yes. The sweet potatoes can be roasted ahead of time and refrigerated in an airtight container. Reheat them in the oven until hot before adding the toppings.

Can I use another cheese instead of feta?

Yes. Soft goat cheese can be used for a tangier flavour, while ricotta can provide a milder and softer alternative. Feta works particularly well because its salty flavour balances the sweetness of the sweet potatoes.

Can I make this recipe vegan?

Yes. Replace the feta and Greek yogurt with a suitable plant-based feta and dairy-free yogurt. Use a vegan alternative for any additional toppings as needed.

How do I keep the avocado from browning?

Dice the avocado shortly before serving and toss it gently with a small amount of fresh lemon juice. Keep it refrigerated until you’re ready to assemble the dish.

Can I add other vegetables?

Absolutely. Roasted bell peppers, cherry tomatoes, caramelized onions, zucchini, or broccoli would all pair nicely with the sweet potatoes, whipped feta, mushrooms, and avocado.

How should I store leftovers?

Store the roasted sweet potatoes, mushroom-spinach mixture, and whipped feta separately in airtight containers in the refrigerator. Add fresh avocado and garnishes just before reheating and serving.
