Description

Loaded Crispy Sweet Potatoes with Whipped Feta, Sautéed Spinach, Mushrooms & Avocado are roasted sweet potatoes topped with creamy whipped feta, golden sautéed mushrooms, tender spinach, and fresh avocado, finished with herbs, lemon zest, and optional red pepper flakes.

Ingredients

4 medium sweet potatoes (about 900 g)

2 tbsp olive oil

1/2 tsp garlic powder

1/2 tsp smoked paprika

1/2 tsp dried oregano

1/2 tsp salt

1/4 tsp black pepper

8 oz (225 g) mushrooms, sliced

5 oz (140 g) fresh baby spinach

1 tbsp olive oil

2 garlic cloves, minced

1/2 tsp dried oregano

1/4 tsp salt

1/4 tsp black pepper

6 oz (170 g) feta cheese, crumbled

1/3 cup (80 g) Greek yogurt

1 tbsp olive oil

1 tbsp fresh lemon juice

1 small garlic clove, minced

1–2 tbsp water, as needed

1 large avocado, diced

2 tbsp fresh parsley, chopped

1 tbsp fresh dill, chopped

1/2 tsp dried oregano

1/4 tsp red pepper flakes, optional

1 tsp lemon zest

Instructions

1. Preheat your oven to 425°F (220°C). Wash and scrub the sweet potatoes thoroughly. Cut each one in half lengthwise and lightly score the flesh with a knife.

2. Brush the cut sides of the sweet potatoes with olive oil. Sprinkle with garlic powder, smoked paprika, dried oregano, salt, and black pepper, making sure the seasoning is evenly distributed.

3. Place the sweet potatoes cut-side down on a parchment-lined baking sheet. Roast for 35–45 minutes, until the flesh is completely tender and the edges are deeply golden and caramelized.

4. While the sweet potatoes roast, add the feta, Greek yogurt, olive oil, lemon juice, and minced garlic to a food processor. Blend for 1–2 minutes until smooth and creamy. Add water, 1 tablespoon at a time, if needed to achieve a soft, spreadable consistency.

5. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add the sliced mushrooms and cook for 5–7 minutes, stirring occasionally, until deeply browned and most of their moisture has evaporated.

6. Add the minced garlic, dried oregano, salt, and black pepper to the mushrooms. Stir for about 30 seconds, then add the baby spinach. Cook for 1–2 minutes, stirring gently, until the spinach is wilted. Remove from the heat.

7. Dice the avocado just before assembling the sweet potatoes. Toss it gently with a small splash of fresh lemon juice to help keep it fresh and add brightness.

8. Remove the roasted sweet potatoes from the oven. Using a fork, gently loosen some of the flesh while keeping the skins intact. This creates a soft base for the toppings while preserving the roasted potato shape.

9. Spoon a generous layer of whipped feta over each roasted sweet potato half. Spread it gently across the warm surface.

10. Top each sweet potato with the warm sautéed mushrooms and spinach. Distribute the vegetables evenly so every serving has plenty of the savoury filling.

11. Scatter the diced avocado over the mushrooms and spinach. The cool, creamy avocado creates a delicious contrast with the warm roasted sweet potato and vegetables.

12. Finish with fresh parsley, dill, lemon zest, and a sprinkle of dried oregano. Add red pepper flakes if you want a subtle spicy kick.

13. Serve immediately while the sweet potatoes are warm, the whipped feta is creamy, the mushrooms are savoury, and the spinach is freshly sautéed.

Notes

Choose sweet potatoes that are similar in size so they roast at the same rate.

Don’t overcrowd the baking sheet. Give the sweet potatoes enough room to caramelize properly.

Brown the mushrooms well and allow most of their moisture to evaporate so they develop a deeper, richer flavour.

Blend the feta thoroughly for 1–2 minutes to create a smooth and creamy texture.

Add the avocado shortly before serving to keep it fresh, creamy, and vibrant.

Use fresh lemon zest for a bright finish that balances the natural sweetness of the sweet potatoes.

Serve immediately for the best contrast between warm sweet potatoes, creamy feta, savoury vegetables, and cool avocado.

The roasted sweet potatoes can be prepared ahead of time and refrigerated in an airtight container. Reheat them in the oven until hot before adding the toppings.

Soft goat cheese can replace feta for a tangier flavour, while ricotta provides a milder alternative.

For a vegan version, replace the feta and Greek yogurt with suitable plant-based alternatives.

Toss diced avocado with a small amount of fresh lemon juice to help slow browning.

Roasted bell peppers, cherry tomatoes, caramelized onions, zucchini, or broccoli can be added as additional vegetables.

Store the roasted sweet potatoes, mushroom-spinach mixture, and whipped feta separately in airtight containers in the refrigerator. Add fresh avocado and garnishes just before serving.

Serve with a simple green salad, cucumber salad, roasted vegetables, or warm crusty bread. For a heartier meal, add chickpeas, lentils, or another plant-based protein.
