Description

Loaded Mexican 7-Layer Dip is a colourful, creamy appetiser packed with refried beans, chunky guacamole, a seasoned sour cream layer, cheddar cheese, juicy tomatoes, black olives, jalapeños and fresh green onions. It’s easy to assemble, requires no baking, and makes a fantastic party dip served with crunchy tortilla chips or fresh vegetables.


Ingredients

1 can (15 oz / 425 g) refried beans

1 tbsp taco seasoning

1 tbsp lime juice

3 ripe avocados

1 tbsp fresh lime juice

1/4 cup finely diced red onion

2 tbsp chopped fresh coriander

Salt and black pepper, to taste

1 cup sour cream

4 oz (115 g) cream cheese, softened

1 tbsp taco seasoning

1 tbsp fresh lime juice

1 1/2 cups shredded cheddar cheese

1 cup diced tomatoes

1/2 cup sliced black olives

1/2 cup sliced jalapeños

1/3 cup sliced green onions

2 tbsp fresh coriander, chopped


Instructions

1. In a bowl, combine the refried beans with the taco seasoning and lime juice. Stir until smooth and evenly combined. Spread the bean mixture evenly across the bottom of a rectangular baking dish.

2. Mash the ripe avocados with the fresh lime juice, finely diced red onion and chopped coriander. Season with salt and black pepper to taste. Keep the guacamole slightly chunky. Gently spread it over the refried bean layer.

3. In a separate bowl, beat together the sour cream, softened cream cheese, taco seasoning and fresh lime juice until smooth and creamy. Carefully spread the mixture over the guacamole layer.

4. Sprinkle the shredded cheddar cheese evenly over the creamy layer.

5. Scatter the diced tomatoes, sliced black olives, jalapeños and green onions generously over the cheese. Finish with chopped fresh coriander.

6. Cover the dish and refrigerate for 30–60 minutes. This gives the layers time to firm up slightly and makes the dip easier to scoop.

7. Serve the Mexican 7-layer dip chilled or slightly cool with tortilla chips, toasted pita chips or crunchy vegetable sticks.

Notes

Use ripe avocados so they are easy to mash into a creamy but slightly chunky guacamole.

Spread each layer gently to help keep the seven layers distinct and attractive.

Chill the assembled dip for 30–60 minutes before serving to help the layers firm up slightly.

Don’t skip the fresh tomatoes, green onions and coriander because they add colour and freshness.

Serve with tortilla chips, toasted pita chips or crunchy vegetable sticks.

A clear or shallow serving dish can make the colourful layers especially attractive for parties and gatherings.

Keep the dip covered and refrigerated until ready to serve.
