For the Sweet Potatoes
4 medium sweet potatoes (about 900 g), scrubbed and dried
2 tbsp olive oil
1/2 tsp garlic powder
1/2 tsp smoked paprika
1/2 tsp dried thyme
1/2 tsp salt
1/4 tsp black pepper
For the Whipped Feta
6 oz (170 g) feta cheese, crumbled
1/3 cup (80 g) Greek yogurt
1 tbsp olive oil
1 tbsp fresh lemon juice
1 small garlic clove, minced
1–2 tbsp water, as needed
For the Garlic Mushrooms
8 oz (225 g) mushrooms, sliced
1 tbsp olive oil
2 garlic cloves, minced
1/2 tsp dried thyme
1/4 tsp salt
1/4 tsp black pepper
For the Avocado Topping
1 large ripe avocado, diced
1 tbsp fresh lemon juice
1 tbsp fresh parsley, chopped
Pinch of salt
For the Hot Honey Finish
3 tbsp hot honey
1/4 tsp red pepper flakes, optional
For Garnishing
1 tbsp fresh parsley, chopped
1 tbsp crumbled feta
1 tsp fresh thyme leaves
1 tbsp pumpkin seeds, optional
Instructions
1. Preheat your oven to 425°F (220°C). Scrub the sweet potatoes thoroughly and pat them dry. Pierce each potato several times with a fork.
2. Rub the sweet potatoes with olive oil and season with garlic powder, smoked paprika, dried thyme, salt, and black pepper. Place them on a lined baking sheet and bake for 45–55 minutes, or until completely tender when pierced with a knife.
3. While the sweet potatoes bake, add the feta, Greek yogurt, olive oil, lemon juice, and minced garlic to a food processor.
4. Blend the feta mixture for 1–2 minutes until smooth and creamy. Add water 1 tablespoon at a time if needed to create a light, spreadable consistency. Set aside.
5. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add the sliced mushrooms and cook for 5–7 minutes, stirring occasionally, until golden and most of their moisture has cooked away.
6. Stir the minced garlic, dried thyme, salt, and black pepper into the mushrooms. Cook for another 1–2 minutes, stirring frequently, until fragrant. Remove from the heat and set aside.
7. Dice the avocado and place it in a small bowl. Gently toss with fresh lemon juice, chopped parsley, and a small pinch of salt.
8. Remove the baked sweet potatoes from the oven and let them cool for 2–3 minutes. Cut a deep slit lengthwise through the centre of each potato without cutting completely through the bottom.
9. Gently press the ends toward the centre to open the potatoes and create space for the toppings.
10. Spoon a generous layer of whipped feta into the centre of each warm sweet potato.
11. Divide the warm garlic mushrooms evenly between the four sweet potatoes and pile them over the whipped feta.
12. Spoon the seasoned diced avocado over the mushrooms.
13. If the hot honey is thick, warm it slightly so it becomes easier to drizzle. Drizzle generously over each loaded sweet potato.
14. Add the optional red pepper flakes for extra heat.
15. Finish with chopped fresh parsley, crumbled feta, fresh thyme leaves, and pumpkin seeds if desired.
16. Serve immediately while the sweet potatoes and mushrooms are warm, the whipped feta is creamy, and the avocado is fresh.
Notes
Choose similar-sized sweet potatoes so they finish baking at approximately the same time.
Piercing the sweet potatoes with a fork allows steam to escape while they bake.
Let the mushrooms cook until their moisture has evaporated so they become golden and concentrated in flavour.
Blend the feta thoroughly in the food processor for the smoothest, creamiest texture.
Prepare the avocado shortly before serving to keep it fresh and vibrant.
Adjust the amount of hot honey according to your preferred level of sweetness and heat.
Sprinkle pumpkin seeds over the dish immediately before serving so they remain crisp.
The sweet potatoes can be baked ahead of time and refrigerated once cooled. Reheat them in the oven until warmed through before adding the toppings.
Soft goat cheese can replace the feta, while cremini, button, baby bella, or mixed mushrooms can be used.
Regular honey can replace hot honey for a milder finish, or the honey can be omitted for a more savoury dish.
Add water gradually to the whipped feta, about 1 tablespoon at a time, until the desired consistency is reached.
To add extra texture, try toasted walnuts, chopped pistachios, green onions, pomegranate seeds, or roasted chickpeas.
Serve with a simple green salad, roasted vegetables, or a fresh cucumber and tomato salad for a complete meal.
For gatherings, prepare the individual components ahead of time and assemble the sweet potatoes just before serving.
