Description

Low-Carb Chicken Souvlaki Skewers with Whipped Garlic Feta Dip combine juicy lemon-and-oregano marinated chicken with a smooth, creamy feta dip. Served with fresh cucumber, cherry tomatoes, lemon wedges and optional Kalamata olives, this Mediterranean-inspired meal is packed with flavour while remaining low in carbohydrates. It’s perfect for weeknight dinners, meal prep or entertaining.


Ingredients

For the Chicken Souvlaki:

1 lb (450 g) chicken breast, cut into cubes

2 tbsp (30 ml) olive oil

2 tbsp (30 ml) fresh lemon juice

2 garlic cloves, minced

1 tsp dried oregano

Β½ tsp paprika

Β½ tsp salt

ΒΌ tsp black pepper

8 wooden skewers

For the Whipped Garlic Feta Dip:

150 g feta cheese

β…“ cup Greek yogurt

1 tbsp olive oil

1 tbsp fresh lemon juice

1 garlic clove, minced

Β½ tsp dried oregano

Black pepper, to taste

For Serving:

Fresh parsley, chopped

Lemon wedges

Cucumber slices

Cherry tomatoes

Kalamata olives, optional


Instructions

Place the olive oil, fresh lemon juice, minced garlic, dried oregano, paprika, salt and black pepper in a large bowl. Stir until well combined.

 

Add the cubed chicken breast and toss thoroughly until each piece is coated with the marinade.

 

Cover the bowl and refrigerate for 20–30 minutes.

 

If using wooden skewers, soak them in water for at least 20 minutes.

 

Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece.

 

Heat a grill pan or outdoor grill over medium-high heat.

 

Place the chicken skewers on the hot grill and cook for approximately 10–12 minutes, turning every few minutes so they brown evenly.

 

Continue cooking until the chicken is golden on the outside and cooked through.

 

While the chicken cooks, add the feta cheese, Greek yogurt, olive oil, lemon juice, minced garlic, dried oregano and black pepper to a blender or food processor.

 

Blend until smooth, creamy and easy to spread or dip.

 

Transfer the whipped garlic feta to a serving bowl.

 

Arrange the hot chicken souvlaki skewers on a serving platter alongside the whipped garlic feta dip.

 

Garnish with freshly chopped parsley and serve with lemon wedges, cucumber slices and cherry tomatoes.

 

Add Kalamata olives if desired.

Notes

Cut the chicken into similar-sized pieces so they cook evenly.

Marinate the chicken for 20–30 minutes as directed.

Soak wooden skewers before using them.

Turn the skewers regularly for even browning.

Make sure the chicken is fully cooked through before serving.

Chicken thighs can be used instead of chicken breast.

Add a pinch of chilli flakes to the marinade for extra heat.

The whipped garlic feta can be prepared ahead and refrigerated.

Store leftover cooked chicken and feta dip separately in airtight containers in the refrigerator.

Reheat the chicken gently and add fresh vegetables and lemon before serving.
