Description
Low-Carb Chicken, Spinach & Mushroom Bake is a creamy, comforting dinner made with tender seasoned chicken, sautéed spinach and mushrooms, and a rich Parmesan, cream cheese, and mozzarella topping. Everything comes together in one satisfying bake for an easy weeknight meal packed with flavour and protein.
Ingredients
2 large boneless, skinless chicken breasts
2 tbsp olive oil
1 tsp garlic powder
1 tsp Italian seasoning
1/2 tsp salt
1/4 tsp black pepper
2 cups fresh baby spinach
8 oz (225 g) mushrooms, sliced
2 garlic cloves, minced

4 oz (115 g) cream cheese, softened
1/2 cup (120 g) plain Greek yogurt
1/2 cup (50 g) grated Parmesan cheese
1 cup (100 g) shredded mozzarella cheese
1/4 tsp garlic powder
1/4 tsp black pepper
2 tbsp fresh parsley, chopped
Extra Parmesan, optional
Freshly cracked black pepper
Instructions
1. Preheat the oven to 400°F (200°C). Lightly grease a medium baking dish with olive oil.
2. Pat the chicken breasts dry with paper towels. Rub them with olive oil, then season both sides with garlic powder, Italian seasoning, salt, and black pepper.
3. Heat a large oven-safe skillet over medium-high heat. Sear the chicken for 2–3 minutes per side, just until lightly golden. Transfer the chicken to a plate.
4. Add 1 tablespoon of olive oil to the same skillet. Add the sliced mushrooms and cook for 5–7 minutes, stirring occasionally, until golden and most of their moisture has cooked away.
5. Stir in the minced garlic, then add the fresh spinach. Cook for 1–2 minutes, until the spinach has wilted. Season with Italian seasoning, salt, and black pepper.
6. In a bowl, combine the softened cream cheese, Greek yogurt, Parmesan cheese, garlic powder, and black pepper. Mix until smooth and creamy.
7. Spread the spinach and mushroom mixture evenly across the bottom of the prepared baking dish. Place the seared chicken breasts on top.
8. Spread the creamy cheese mixture over the chicken and vegetables. Sprinkle the shredded mozzarella evenly over the top.
9. Bake uncovered for 20–25 minutes, or until the chicken reaches 165°F (74°C) in the thickest part and the cheese is melted and golden.
10. Let the bake rest for 5 minutes before serving. Finish with fresh parsley, extra Parmesan, and freshly cracked black pepper.
Notes
Pat the chicken dry before seasoning to help the seasoning stick and encourage better browning.
Allow most of the mushroom moisture to cook away before adding the spinach.
Bake the chicken until the thickest part reaches 165°F (74°C) to avoid overcooking.
Let the finished bake rest for 5 minutes before serving.
Add fresh parsley at the end for a fresh contrast to the creamy topping.
The creamy topping can be mixed ahead of assembling the bake.
The assembled bake can be prepared ahead, but the cooking time may need adjustment if the ingredients are chilled before baking.
