Description

A colourful Thai-inspired crunch salad packed with crisp cabbage, sweet mango, crunchy cucumber, carrots, peppers, fresh herbs, and golden crispy chickpeas. Everything is brought together with a creamy peanut-lime dressing for a delicious balance of savoury, tangy, sweet, and nutty flavours.

Ingredients

For the Salad

4 cups (300 g) finely shredded green cabbage

1 cup (120 g) shredded carrots

1 large cucumber, thinly sliced

1 ripe mango, peeled and diced

1/2 cup (75 g) red bell pepper, thinly sliced

1/3 cup (50 g) red cabbage, finely shredded

1/4 cup (30 g) green onions, sliced

1/4 cup (15 g) fresh cilantro, chopped

2 tbsp fresh mint leaves, chopped

For the Crispy Chickpeas

1 can (15 oz/425 g) chickpeas, drained, rinsed, and thoroughly dried

1 tbsp olive oil

1/2 tsp garlic powder

1/2 tsp smoked paprika

1/4 tsp ground cumin

1/4 tsp salt

1/4 tsp black pepper

For the Creamy Peanut-Lime Dressing

1/4 cup (65 g) creamy peanut butter

2 tbsp fresh lime juice

1 tbsp soy sauce

1 tbsp honey or maple syrup

1 tsp sesame oil

1 small garlic clove, finely minced

1 tsp grated fresh ginger

2–3 tbsp warm water, as needed

1/4 tsp red pepper flakes, optional

For Garnishing

2 tbsp roasted peanuts, roughly chopped

1 tbsp sesame seeds

Fresh cilantro

Fresh mint

Lime wedges

Instructions

1. Preheat the oven to 425°F (220°C). Drain and rinse the chickpeas thoroughly, then spread them over a clean kitchen towel and pat them very dry. Remove any loose skins if desired.

2. Place the dried chickpeas in a bowl. Add the olive oil, garlic powder, smoked paprika, ground cumin, salt, and black pepper. Toss thoroughly until evenly coated.

3. Spread the seasoned chickpeas in a single layer on a parchment-lined baking sheet. Roast for 25–35 minutes, shaking the pan halfway through cooking, until golden and crisp.

4. Remove the chickpeas from the oven and let them cool slightly. They will continue to firm up as they cool.

5. While the chickpeas roast, finely shred the green and red cabbage and carrots. Thinly slice the cucumber, red bell pepper, and green onions. Peel and dice the mango, then roughly chop the cilantro and mint.

6. Make the dressing by whisking together the peanut butter, lime juice, soy sauce, honey or maple syrup, sesame oil, minced garlic, grated ginger, and optional red pepper flakes.

7. Gradually whisk in the warm water, one tablespoon at a time, until the dressing becomes smooth, creamy, and easy to drizzle. Add more water if necessary.

8. Add the green cabbage, carrots, cucumber, mango, red bell pepper, red cabbage, green onions, cilantro, and mint to a large serving bowl. Toss gently to combine.

9. Pour about two-thirds of the peanut-lime dressing over the salad. Toss gently until the vegetables and fruit are lightly coated. Reserve the remaining dressing for serving.

10. Scatter the roasted chickpeas over the salad just before serving to help preserve their crisp texture.

11. Sprinkle the chopped roasted peanuts and sesame seeds over the salad. Finish with fresh cilantro, mint leaves, and lime wedges.

12. Serve immediately while the vegetables are crisp, the mango is juicy, and the chickpeas are crunchy. Drizzle with additional peanut-lime dressing as desired.

Notes

Dry the chickpeas thoroughly before roasting to help them become properly crisp.

Use a ripe mango that is fragrant and slightly soft when gently pressed for the best sweetness and texture.

Prepare the salad shortly before serving whenever possible to keep the vegetables crisp.

Add the crispy chickpeas at the end so they do not soften in the dressing.

Thin the dressing gradually with warm water so you can control the consistency.

Add extra fresh lime juice if you prefer a brighter dressing.

Start with two-thirds of the dressing and add more only if needed.

The vegetables can be prepared several hours ahead and refrigerated.

Prepare the dressing and crispy chickpeas separately when making the salad ahead of time.

Cashews or toasted almonds can replace the peanuts.

For a completely plant-based version, use maple syrup instead of honey and a suitable vegetarian soy sauce.

Serve with grilled chicken, shrimp, tofu, jasmine rice, rice noodles, or spring rolls for a larger meal.
