Description

Maple-Roasted Sweet Potato Boats with Whipped Feta and Hot Honey are a delicious vegetarian dish featuring caramelized sweet potatoes filled with creamy whipped feta, crunchy toasted pecans, and a drizzle of spicy hot honey.

Ingredients

4 medium sweet potatoes

2 tbsp olive oil

2 tbsp pure maple syrup

1 tsp smoked paprika

1 tsp garlic powder

Salt and black pepper, to taste

6 oz (170 g) feta cheese

1/4 cup Greek yogurt

1 tbsp fresh lemon juice

1 garlic clove, minced

2 tbsp hot honey

1/4 cup toasted pecans, chopped

2 tbsp fresh chives, chopped

Crushed red pepper flakes (optional)

Instructions

1. Preheat the oven to 425°F (220°C). Rub the sweet potatoes with olive oil and place them on a baking sheet.

2. Roast for 45–50 minutes until tender. During the last 10 minutes, brush the potatoes with maple syrup and return them to the oven until lightly caramelized.

3. Blend the feta cheese, Greek yogurt, lemon juice, and minced garlic until smooth and creamy. Season with black pepper to taste.

4. Slice each roasted sweet potato down the center and gently fluff the flesh with a fork.

5. Fill each sweet potato with a generous spoonful of whipped feta.

6. Top with toasted pecans and drizzle generously with hot honey.

7. Garnish with chopped fresh chives and a pinch of crushed red pepper flakes if desired. Serve warm.

Notes

Brush the maple syrup on during the last 10 minutes to prevent burning.

Toast the pecans before using for the best flavor and crunch.

Blend the whipped feta until completely smooth and fluffy.

Regular honey can be substituted for hot honey if you prefer a milder flavor.

Store leftovers in the refrigerator for up to 4 days and reheat the sweet potatoes before adding fresh whipped feta.
