Description

Ingredients

2 chicken breasts, sliced into strips

1 tbsp olive oil (for chicken)

2 garlic cloves, minced

½ tsp salt

½ tsp black pepper

1 tsp paprika

½ tsp oregano

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 zucchini, sliced

1 cup cherry tomatoes, halved

2 tbsp olive oil (for sauce)

2 tbsp lemon juice

1 tsp honey

½ tsp chili flakes

Fresh parsley, to garnish

Extra black pepper, to garnish


Instructions

1. In a medium bowl, toss the chicken strips with salt, pepper, paprika, and oregano until evenly coated.

2. Heat 1 tablespoon olive oil in a large non-stick skillet or wok over medium-high heat. Add the chicken in a single layer and cook for 3–4 minutes per side until golden and fully cooked. Remove and set aside.

3. In the same pan, add the minced garlic and sauté for 30 seconds until fragrant.

4. Add the sliced bell peppers and zucchini. Stir-fry for 3–4 minutes until slightly tender but still vibrant and crisp.

5. Add the halved cherry tomatoes and cook for 1–2 minutes until just starting to soften and burst.

6. Return the cooked chicken to the pan. Add 2 tablespoons olive oil, lemon juice, honey, and chili flakes. Toss everything together for 1–2 minutes until evenly coated and heated through.

7. Taste and adjust seasoning as needed.

8. Garnish with fresh parsley and extra black pepper.

9. Serve hot on its own or over rice or quinoa.

Slice chicken uniformly so it cooks evenly.
