Ingredients

For the Lamb:

400 g ground lamb

2 garlic cloves, minced

1 tsp ground cumin

1 tsp dried oregano

1/2 tsp paprika

Salt and black pepper, to taste

1 tbsp olive oil

For the Whipped Goat Cheese:

150 g goat cheese

2–3 tbsp cream or Greek yogurt

1 tbsp olive oil

1 tsp lemon juice

Pinch of salt

For the Wrap:

3–4 flatbreads or pita

1 cup arugula or lettuce

1 tomato, sliced

1/2 cucumber, sliced

1/4 red onion, thinly sliced

For the Hot Honey:

2 tbsp honey

1–2 tsp chili flakes or hot sauce

Optional:

Fresh mint or parsley

Crumbled feta

Pickled onions

Instructions

1. Heat the olive oil in a large skillet over medium-high heat. Cook the ground lamb with the garlic, cumin, oregano, paprika, salt and black pepper until browned and slightly crispy, about 8 to 10 minutes.

2. Blend the goat cheese, cream or Greek yogurt, olive oil, lemon juice and salt until smooth and creamy.

3. Warm the honey and stir in the chili flakes or hot sauce.

4. Warm the flatbreads until soft and pliable.

5. Spread the whipped goat cheese over each flatbread.

6. Top with the cooked lamb, arugula, tomato, cucumber and red onion.

7. Drizzle generously with the hot honey.

8. Add fresh herbs, crumbled feta or pickled onions if desired.

9. Wrap tightly, slice in half and serve immediately.

Notes

Cook the lamb until lightly crispy for maximum flavor.

Use room-temperature goat cheese for a smoother spread.

Warm the flatbreads before assembling to prevent tearing.

Customize with olives, roasted peppers or tzatziki.

Store leftover lamb and whipped goat cheese separately in the refrigerator for up to 3 days.
