Description
Mediterranean Spinach and Feta Cheese Crisps are a simple, savoury appetiser made with fresh spinach, tangy feta, Parmesan and mozzarella. Baked until bubbling and golden around the edges, these little cheese crisps become wonderfully crunchy as they cool.
Ingredients
1 cup fresh spinach, finely chopped
½ cup feta cheese, crumbled
½ cup Parmesan cheese, finely grated
½ cup mozzarella cheese, shredded
1 tsp olive oil
½ tsp garlic powder
½ tsp dried oregano
¼ tsp black pepper
Pinch of salt
Instructions
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
Finely chop the fresh spinach and gently squeeze out as much excess moisture as possible.
Place the chopped spinach in a bowl and add the crumbled feta, grated Parmesan and shredded mozzarella. Add the olive oil, garlic powder, dried oregano, black pepper and a pinch of salt. Mix until evenly combined.
Scoop small portions of the mixture onto the prepared baking sheet, leaving space between each portion. Gently flatten each mound with the back of a spoon to create thin, even rounds.
Bake for 10–14 minutes, or until the cheese is bubbling and the edges are golden brown.
Remove from the oven and allow the crisps to cool for 5–10 minutes. The melted cheese will firm up and become crunchier as it cools.
Carefully transfer the crisps to a serving plate. Serve as a snack or appetiser, or use them as a crunchy topping for salads and soups.
Notes
Squeeze the chopped spinach thoroughly to remove excess moisture.
Keep the cheese rounds thin and evenly flattened for the crispiest texture.
Leave enough space between the crisps so they bake evenly without merging.
Watch the final few minutes closely because cheese can brown quickly.
Allow the crisps to cool after baking so they firm up and become crunchier.
Serve as an appetiser, snack, salad topping, soup topping or alongside other Mediterranean-inspired appetisers.
If using frozen spinach, thaw it completely and squeeze it very dry before adding it to the mixture.
Store completely cooled leftovers in an airtight container.
