Description

Colourful roasted sweet potato boats filled with a fresh Mediterranean chickpea salad, cherry tomatoes, cucumber, Kalamata olives, creamy feta, and fragrant herbs, all finished with a bright lemon herb dressing.

Ingredients

For the Sweet Potato Boats

4 medium sweet potatoes (about 900 g)

2 tbsp olive oil

1/2 tsp smoked paprika

1/2 tsp garlic powder

1/2 tsp dried oregano

1/2 tsp salt

1/4 tsp black pepper

For the Chickpea Salad

1 can (15 oz / 425 g) chickpeas, drained and rinsed

1 cup (150 g) cherry tomatoes, halved

1/2 cup (75 g) cucumber, diced

1/4 cup (35 g) red onion, finely diced

1/3 cup (50 g) Kalamata olives, pitted and sliced

1/2 cup (75 g) crumbled feta cheese

2 tbsp fresh parsley, chopped

1 tbsp fresh dill, chopped

For the Lemon Herb Dressing

3 tbsp extra-virgin olive oil

1 1/2 tbsp fresh lemon juice

1 tbsp red wine vinegar

1 tsp honey

1 tsp dried oregano

1 small garlic clove, minced

1/4 tsp salt

1/4 tsp black pepper

For Garnishing

1 tbsp fresh parsley, chopped

1 tbsp fresh dill

1 tsp lemon zest

1 tbsp crumbled feta

Instructions

1. Preheat the oven to 425°F (220°C). Wash and scrub the sweet potatoes thoroughly, then pat them dry. Pierce each potato several times with a fork to allow steam to escape while roasting.

2. Place the sweet potatoes on a parchment-lined baking sheet and roast for 40–50 minutes, depending on their size, until completely tender and easily pierced with a fork.

3. While the sweet potatoes roast, add the drained chickpeas, halved cherry tomatoes, diced cucumber, red onion, Kalamata olives, crumbled feta, parsley, and dill to a large bowl. Toss gently to combine.

4. In a small bowl or jar, whisk together the extra-virgin olive oil, lemon juice, red wine vinegar, honey, dried oregano, minced garlic, salt, and black pepper until smooth and well combined.

5. Pour the lemon herb dressing over the chickpea mixture. Gently toss until the vegetables and chickpeas are evenly coated. Let the salad sit for about 10 minutes so the flavours can blend together.

6. Remove the roasted sweet potatoes from the oven and let them cool for about 5 minutes. Carefully slice each potato lengthwise, stopping before cutting completely through the bottom. Gently press the sides apart and use a fork to fluff the sweet potato flesh.

7. Drizzle a little olive oil over the exposed sweet potato flesh. Sprinkle lightly with smoked paprika and dried oregano for an extra layer of savoury flavour.

8. Spoon a generous amount of the Mediterranean chickpea salad into each sweet potato boat. Arrange some of the colourful tomatoes, cucumber, olives, and chickpeas toward the top for an attractive presentation.

9. Sprinkle additional crumbled feta over each sweet potato boat. The creamy, tangy cheese provides a delicious contrast to the naturally sweet roasted potato.

10. Finish with fresh parsley, dill, and lemon zest. Add a light drizzle of extra-virgin olive oil if desired.

11. Serve warm or at room temperature, with a generous combination of creamy roasted sweet potato, hearty chickpeas, crisp vegetables, salty olives, feta, and fresh herbs.

Notes

Choose similar-sized sweet potatoes so they roast evenly and finish at approximately the same time. Pierce the sweet potatoes before roasting to allow steam to escape. Let the potatoes cool for about 5 minutes before opening them so they are easier to handle. Drain the chickpeas well to prevent the filling from becoming watery and diluting the dressing. Use fresh lemon juice for the brightest dressing flavour. Gently toss the chickpea salad to help keep the tomatoes and feta intact. Goat cheese, crumbled queso fresco, or a mild Mediterranean-style cheese can be used instead of feta. Bell peppers, roasted red peppers, avocado, or finely chopped spinach can be added to the chickpea salad. The sweet potatoes can be roasted ahead of time and refrigerated once cooled. Reheat gently in the oven before filling. The chickpea salad can be prepared several hours ahead and refrigerated. Add it to the sweet potatoes shortly before serving for the freshest texture. Store roasted sweet potatoes and chickpea salad separately in airtight containers in the refrigerator. Serve with a green salad, roasted vegetables, warm pita bread, Greek yogurt, or tahini sauce. For entertaining, prepare the sweet potatoes and chickpea salad separately and assemble shortly before serving.
