Description

No-Bake Fruity Pebbles Cheesecake features a buttery Fruity Pebbles and Nilla Wafer crust, a light and creamy no-bake cheesecake filling loaded with crushed Fruity Pebbles, and a fluffy whipped cream topping. It’s the perfect colourful dessert for birthdays, holidays and family celebrations.

Ingredients

For the Fruity Pebble Crust:

1 cup Nilla Wafer crumbs

2 cups Fruity Pebbles cereal

1/2 cup (1 stick) unsalted butter, melted

For the Cheesecake Filling:

1 1/2 cups heavy whipping cream, very cold

3/4 cup powdered sugar

2 cups Fruity Pebbles cereal, finely ground

16 oz full-fat cream cheese, softened

1/2 cup granulated sugar

2 tbsp heavy cream

For the Whipped Cream Topping:

3/4 cup heavy whipping cream, very cold

2 tbsp powdered sugar

1/2 cup Fruity Pebbles cereal, finely ground

Extra whole Fruity Pebbles for garnish

Instructions

1. Lightly grease a 9-inch springform pan and line the bottom with parchment paper.

2. Grind the Nilla Wafers and 2 cups of Fruity Pebbles into fine crumbs. Mix with the melted butter until evenly moistened, then firmly press into the bottom and slightly up the sides of the pan. Refrigerate while preparing the filling.

3. Grind the remaining Fruity Pebbles separately for the filling and topping.

4. Whip the cold heavy cream until soft peaks form. Add the powdered sugar and continue beating until stiff peaks form.

5. Beat the softened cream cheese until smooth. Add the granulated sugar and heavy cream and mix until creamy.

6. Fold the whipped cream into the cream cheese mixture, then gently fold in the ground Fruity Pebbles.

7. Spread the filling evenly over the chilled crust and smooth the top. Cover and refrigerate for at least 4 hours or overnight.

8. Whip the topping ingredients until stiff peaks form. Pipe decorative swirls around the cheesecake and garnish with extra Fruity Pebbles before serving.

Notes

Use full-fat cream cheese for the creamiest texture.

Allow the cheesecake to chill overnight for the cleanest slices.

Fold the whipped cream gently to keep the filling light and fluffy.

Store leftovers covered in the refrigerator for up to 5 days.

Freeze individual slices for up to 2 months.
