Description
No-Knead Rosemary Cranberry Bread with Olive Oil & Sea Salt is a rustic artisan loaf with a crisp golden crust, soft airy crumb, fragrant rosemary, sweet dried cranberries, rich olive oil, and a sprinkle of flaky sea salt. This easy no-knead bread develops incredible flavor through a long slow rise, making it perfect for holiday tables, cheese boards, soups, or everyday baking.
Ingredients
3 cups all-purpose flour
1½ teaspoons salt
1 teaspoon instant yeast
1½ cups warm water
1 tablespoon olive oil, plus extra for brushing
1 tablespoon fresh rosemary, finely chopped
¾ cup dried cranberries
1 teaspoon honey (optional)
Flaky sea salt, for topping
Extra fresh rosemary for garnish (optional)
Instructions
In a large bowl, combine the flour, salt, instant yeast, chopped rosemary, and dried cranberries.
Add the warm water, olive oil, and honey if using, then stir until a shaggy dough forms.
Cover the bowl and let the dough rise at room temperature for 12 to 18 hours until doubled and bubbly.
Turn the dough onto a lightly floured surface and gently fold it several times to form a rough ball.
Transfer the dough onto parchment paper, cover, and let it rest for 30 to 45 minutes.
Meanwhile, preheat the oven to 450°F (230°C) with a Dutch oven inside.
Carefully place the dough into the hot Dutch oven using the parchment paper.
Brush the top with olive oil and sprinkle generously with flaky sea salt.
Cover and bake for 30 minutes.
Remove the lid and bake for another 10 to 15 minutes until the crust is deep golden brown.
Transfer the bread to a wire rack and allow it to cool completely before slicing.
Garnish with extra rosemary if desired and serve.
Notes
The long rise replaces kneading and creates a light, airy crumb.
Use fresh rosemary for the best flavor.
Preheating the Dutch oven creates a crisp artisan crust.
This bread pairs beautifully with olive oil, butter, soft cheeses, soups, and charcuterie boards.
Store wrapped at room temperature for up to 3 days or freeze for longer storage.
