Peach, Watermelon & Feta Cubes with Hot Honey-Mint Drizzle is a colourful, refreshing appetiser that brings together juicy watermelon, ripe peaches and creamy feta with a sweet and slightly spicy honey-mint drizzle. Fresh lime and mint add a bright finish, making these fruit and feta cubes perfect for summer entertaining, brunches or an easy no-fuss appetiser.
Ingredients
3 cups seedless watermelon, cut into 1-inch cubes
3 ripe peaches, cut into 1-inch cubes
6 oz (170 g) feta cheese, cut into 1-inch cubes
Fresh mint leaves, for layering and garnish
1/3 cup honey
1/2 teaspoon red pepper flakes, or to taste
1 tablespoon fresh lime juice
1 teaspoon lime zest
2 tablespoons fresh mint leaves, finely chopped
Pinch of sea salt
Instructions
1. Cut the watermelon and peaches into evenly sized 1-inch cubes. Gently pat the watermelon with paper towels to remove excess moisture.
2. Cut the feta into cubes roughly the same size as the watermelon and peaches.
3. Add the honey, red pepper flakes, fresh lime juice and lime zest to a small saucepan. Warm gently over low heat for 2–3 minutes. Remove from the heat and stir in the finely chopped fresh mint and a pinch of sea salt.
4. Arrange the watermelon, peach and feta cubes on a serving platter, alternating the ingredients as you go. Tuck fresh mint leaves between the cubes.
5. Lightly drizzle the warm hot honey-mint mixture over the fruit and feta.
6. Finish with extra fresh mint and a little lime zest.
7. Serve immediately while the fruit is chilled, juicy and refreshing.
Notes
Choose ripe peaches that are juicy but still firm enough to cut into neat cubes.
Keep the watermelon, peaches and feta similar in size for a more uniform presentation.
Pat the watermelon dry before assembling to remove excess moisture.
Adjust the red pepper flakes according to how much heat you prefer.
Stir the fresh mint into the honey after removing it from the heat to keep the herb flavour bright.
The fruit and feta can be prepared ahead, but assemble and drizzle shortly before serving for the freshest presentation.
The honey mixture should be warm rather than very hot when drizzled over the chilled fruit and feta.
