Description

Pear, Apple & Brie Flatbread with Cranberry Jelly and Feta Crumble is a simple sweet-and-savoury appetiser made with crisp flatbread, creamy Brie, fresh pear and apple, tangy cranberry jelly, and salty feta. Baked until the Brie is soft and melted, this easy recipe is ready in just 20 minutes.


Ingredients

1 large flatbread or naan

½ pear, thinly sliced

½ apple, thinly sliced

5 oz Brie cheese, sliced

23 tbsp cranberry jelly

¼ cup crumbled feta

1 tbsp olive oil

1 tsp fresh thyme or rosemary, optional


Instructions

1. Preheat the oven to 400°F (200°C). Lightly brush the flatbread with olive oil and place it on a baking sheet. Bake for 4–5 minutes, just until the base becomes slightly crisp.

2. Remove the flatbread from the oven and arrange the sliced Brie evenly over the surface. Place the thinly sliced pear and apple on top.

3. Spoon small dollops of cranberry jelly over the fruit and Brie, then sprinkle with crumbled feta. Add fresh thyme or rosemary if using.

4. Return the flatbread to the oven and bake for another 8–10 minutes, until the Brie is soft and melted and the fruit is slightly tender.

5. Remove the flatbread from the oven and let it cool briefly. Slice and serve warm as a sweet-savoury appetiser or light meal.

Notes

Slice the pear and apple thinly so they become tender quickly while the Brie melts.

Bake the flatbread briefly before adding the toppings to help create a crisp base.

Use small cranberry jelly dollops so the cranberry flavour complements rather than overpowers the Brie and fruit.

Serve warm while the Brie is softest and creamiest.

Fresh thyme or rosemary can be used depending on your preferred flavour.

The recipe works with either one large flatbread or naan.

For the best texture, assemble and bake shortly before serving so the base stays crisp.
