Description
Crispy pear brie flatbread with melty cheese, juicy pears, caramelized walnuts, and a rosemary hot honey drizzle—an elegant 22-minute appetizer for any occasion!
Ingredients
1 large flatbread or naan
2 tbsp olive oil
150 g brie cheese, sliced
1 ripe pear, thinly sliced
½ cup (60 g) walnuts
2 tbsp brown sugar
3 tbsp honey
½ tsp chili flakes
1 tsp fresh rosemary, finely chopped
Fresh rosemary sprigs, to garnish
Cracked black pepper, to garnish
Instructions
1. Preheat the oven to 400°F (200°C).
2. Place the flatbread on a parchment-lined baking tray and brush both sides with olive oil.
3. Arrange brie slices evenly over the flatbread (keep the rind on).
4. Layer thinly sliced pears over the brie in a rustic overlapping pattern.
5. In a small skillet over medium heat, toast the walnuts for 2 minutes, then add brown sugar and stir for another 1–2 minutes until glossy and caramelized. Transfer to parchment to cool, then break into pieces.
6. Scatter the caramelized walnuts across the flatbread.
7. Bake for 10–12 minutes until the cheese is bubbly, the pears are tender, and the edges are crispy and golden.
8. In a small saucepan, gently warm the honey with chili flakes and chopped rosemary for 1–2 minutes to infuse.
9. Drizzle the rosemary hot honey generously over the baked flatbread.
10. Garnish with fresh rosemary sprigs and cracked black pepper.
11. Slice with a pizza cutter and serve warm immediately.
Notes
Use ripe but firm pears—Bosc, Anjou, or Bartlett all work beautifully.
Keep the brie rind on for the creamiest melt and richest flavor.
Slice pears thin and evenly so they cook through.
Watch caramelizing walnuts closely—they burn fast.
Warm the honey gently, don’t boil it, so the rosemary flavor stays fresh.
