  • Author: vitalityrecipes

Description

Warm, creamy Brie bites coated in a crisp pecan-Parmesan crust and finished with a sweet, tangy raspberry honey glaze with a gentle chili kick. These elegant appetizers are perfect for holiday parties, brunches, dinner parties, and festive appetizer boards.

Ingredients

For the Brie Bites

8 oz (225 g) Brie cheese, cut into 20 bite-sized cubes

1/2 cup (60 g) pecans, finely chopped

1/3 cup (35 g) panko breadcrumbs

1/4 cup (25 g) grated Parmesan cheese

1/2 tsp garlic powder

1/2 tsp dried thyme

1/4 tsp salt

1/4 tsp black pepper

2 large eggs, beaten

1/3 cup (40 g) all-purpose flour

2 tbsp olive oil

For the Raspberry Chili Honey Glaze

1/3 cup (80 g) raspberry preserves

2 tbsp honey

1 tbsp fresh lemon juice

1/2 tsp red pepper flakes

1 tsp Dijon mustard

Pinch of salt

For Garnishing

2 tbsp fresh raspberries

1 tbsp chopped pecans

1 tsp fresh thyme leaves

1 tbsp honey, optional

Instructions

1. Cut the Brie into 20 small, evenly sized cubes. Keep the cheese chilled while preparing the coating so it remains firm and easy to handle.

2. In a shallow bowl, combine the finely chopped pecans, panko breadcrumbs, Parmesan cheese, garlic powder, dried thyme, salt, and black pepper.

3. Set up a coating station with the flour in one shallow bowl, beaten eggs in a second bowl, and the seasoned pecan mixture in a third bowl.

4. Dip each chilled Brie cube into the flour, shaking off any excess. Dip it into the beaten egg, then transfer it to the pecan mixture. Press the coating gently around the cheese so all sides are covered.

5. Arrange the coated Brie bites on a plate and refrigerate for 15–20 minutes. Chilling helps the coating stay attached and prevents the Brie from melting too quickly.

6. Preheat the oven to 400°F (200°C). Arrange the chilled Brie bites on a parchment-lined baking sheet and lightly brush or drizzle them with olive oil.

7. Bake for 8–10 minutes, carefully turning the bites halfway through, until the pecan coating is golden and crisp and the Brie inside is warm and soft. Watch closely to prevent the cheese from melting completely out of the coating.

8. While the Brie bites bake, combine the raspberry preserves, honey, lemon juice, red pepper flakes, Dijon mustard, and salt in a small saucepan.

9. Warm the glaze over low heat for 3–4 minutes, stirring occasionally, until smooth, glossy, and slightly loosened. Remove from the heat.

10. Transfer the warm Brie bites to a serving platter. Drizzle the raspberry chili honey glaze lightly over the top or serve it in a small bowl alongside the bites for dipping.

11. Scatter fresh raspberries and chopped pecans around the Brie bites. Finish with fresh thyme leaves and, if desired, a light drizzle of honey.

12. Serve immediately while the pecan coating is crisp and the Brie is warm and creamy.

Notes

Keep the Brie cold while cutting and coating it because chilled cheese is easier to handle and less likely to become sticky. Use finely chopped pecans for a more even coating and easier-to-eat bites. Press the pecan mixture firmly but gently onto each Brie cube so it adheres securely. Do not skip the 15–20 minute chilling step before baking; it helps keep the coating attached and gives the Brie more protection from melting too quickly. Watch the Brie bites closely during the final minutes of baking because Brie melts quickly. Reduce or omit the red pepper flakes for a sweeter, milder raspberry glaze, or add more for extra chili heat. Walnuts, almonds, or pistachios can be substituted for pecans. Raspberry jam can be used instead of raspberry preserves. If it is very thick, add a small splash of water while warming the glaze. You can coat the Brie bites several hours ahead and keep them covered and refrigerated until ready to bake. To help prevent the Brie from leaking, coat every side thoroughly, press the coating firmly onto the cheese, chill before baking, and avoid overbaking. Serve immediately for the best crisp texture. Arrange with fresh raspberries, extra pecans, and thyme for an elegant presentation. These bites pair well with crackers, toasted baguette slices, grapes, sliced apples, toasted nuts, and other mild cheeses. For a party platter, serve alongside other cheeses, fruit, and crackers as part of an appetizer board.
