Description

Pineapple, Strawberry, Kiwi & Feta Cubes with Hot Honey-Lime Drizzle is a colourful, refreshing appetiser that combines juicy tropical fruit, creamy salty feta and a sweet-and-spicy honey-lime drizzle. Fresh mint adds a cooling finish, making these fruit and feta cubes a fun option for entertaining, brunches or summer gatherings.


Ingredients

2 cups fresh pineapple, cut into cubes

1½ cups strawberries, hulled and halved

3 kiwis, peeled and cut into chunks

8 oz (225 g) feta cheese, cut into cubes

Fresh mint leaves, for garnish

1/4 cup honey

1 tsp red pepper flakes

2 tbsp fresh lime juice

1 tsp lime zest

Pinch of sea salt


Instructions

1. Cut the pineapple, strawberries and kiwi into similar-sized pieces. Gently pat the fruit with paper towels to remove excess moisture.

2. Cut the feta into bite-sized cubes, keeping the pieces firm enough to hold their shape when arranged with the fruit.

3. Add the honey, red pepper flakes, fresh lime juice, lime zest and a pinch of sea salt to a small saucepan. Warm gently over low heat for 1–2 minutes, stirring until combined. Remove from the heat and allow the mixture to cool slightly.

4. Arrange the pineapple, strawberry, kiwi and feta cubes on a serving platter, alternating the colours for a bright presentation.

5. Drizzle the warm honey-lime mixture evenly over the fruit and feta.

6. Scatter fresh mint leaves over the top. Add a little extra lime zest if desired.

7. Serve immediately while the fruit is chilled and the feta is creamy and salty.

Notes

Gently pat the fruit dry before assembling to help keep the platter neat.

Keep the fruit and feta pieces similar in size so the platter is easy to arrange and each bite has a good balance.

Keep the feta firm so the cubes hold their shape during assembly.

Add the honey-lime drizzle just before serving to maintain the freshest texture.

Fresh mint is best added at the end.

The pineapple, strawberries and kiwi can be prepared ahead of time and kept chilled separately from the drizzle.

The hot honey-lime drizzle can also be prepared ahead and allowed to cool slightly before serving.

The chilli flakes can be omitted for a milder flavour.

Serve immediately after assembly because the dressed fruit can release moisture over time.
