Ingredients
For the Brie Bites
1 wheel (8 oz) Brie cheese, cut into 1-inch cubes
1/2 cup crushed pistachios
1 tablespoon olive oil
12–16 mini phyllo cups or buttery crackers
For the Raspberry Honey Glaze
1/4 cup raspberry preserves
2 tablespoons honey
1 teaspoon fresh lemon juice
1/2 teaspoon fresh thyme leaves (optional)
For Garnish
2 tablespoons chopped pistachios
Fresh thyme leaves
Fresh raspberries (optional)
Instructions
Preheat the oven to 375°F (190°C) and line a baking tray with parchment paper.
Lightly toss the Brie cubes with olive oil.
Coat each Brie cube in the crushed pistachios, gently pressing the nuts to adhere.
Place one coated Brie cube into each mini phyllo cup or on top of each buttery cracker.
Arrange on the prepared baking tray.
Bake for 8 to 10 minutes until the Brie is soft and the pistachios are lightly toasted.
Meanwhile, combine the raspberry preserves, honey, lemon juice, and thyme in a small saucepan.
Warm over low heat for 2 to 3 minutes, stirring until smooth and glossy.
Remove the Brie bites from the oven.
Drizzle each bite generously with the warm raspberry honey glaze.
Sprinkle with chopped pistachios and fresh thyme.
Garnish with fresh raspberries if desired.
Serve immediately while warm and creamy.
Notes
Use chilled Brie to make cutting and coating easier.
Drizzle the glaze just before serving to keep the phyllo cups or crackers crisp.
Toast the pistachios lightly beforehand for even deeper flavor.
These can be assembled ahead of time and baked just before serving.
Store leftovers in the refrigerator for up to 2 days and reheat gently before adding fresh glaze.
