Ingredients
For the Brie Bites
1 sheet puff pastry, thawed
8 oz (225 g) Brie cheese, cut into small cubes
1/2 cup (60 g) finely chopped pistachios
1/4 cup (30 g) finely chopped walnuts, optional
1 egg, beaten
1 tbsp honey
1/4 tsp black pepper
Pinch of salt
For the Raspberry Honey Glaze
1/2 cup (160 g) raspberry preserves
2 tbsp honey
1 tbsp fresh lemon juice
1 tsp balsamic vinegar
1/2 tsp Dijon mustard
For Garnishing
2 tbsp chopped pistachios
1 tbsp fresh thyme leaves
Fresh raspberries, optional
Instructions
1. Preheat the oven to 375°F (190°C). Lightly grease a 12-cup mini muffin pan.
2. Unroll the thawed puff pastry onto a lightly floured surface and cut it into 12 equal squares.
3. Gently press one pastry square into each muffin cup, allowing the corners to extend slightly above the edges.
4. Place one cube of Brie into the center of each puff pastry cup.
5. Lightly drizzle or brush a small amount of honey over the Brie, then season with black pepper and a pinch of salt.
6. Sprinkle the finely chopped pistachios evenly over the Brie. If using walnuts, add a small amount to each pastry cup.
7. Gently fold the corners of each puff pastry square toward the center without completely covering the filling.
8. Brush the exposed pastry lightly with the beaten egg.
9. Bake for 15–20 minutes, until the puff pastry is golden brown, crisp, and fully puffed and the Brie is melted and creamy.
10. While the Brie bites bake, combine the raspberry preserves, honey, lemon juice, balsamic vinegar, and Dijon mustard in a small saucepan.
11. Warm the raspberry mixture over low heat for 3–5 minutes, stirring occasionally, until smooth, glossy, and slightly loosened.
12. Remove the baked Brie bites from the oven and let them cool in the muffin pan for 3–5 minutes.
13. Carefully loosen the edges and transfer the bites to a serving platter.
14. Spoon or drizzle a small amount of the warm raspberry honey glaze over each Brie bite.
15. Garnish with chopped pistachios and fresh thyme leaves. Arrange fresh raspberries around the platter if desired.
16. Serve warm or at room temperature while the pastry is crisp, the Brie is creamy, and the raspberry glaze provides a bright sweet-tart contrast.
Notes
Keep the puff pastry cold until ready to use for better puffing and easier handling. Don’t overfill the pastry cups because a small cube of Brie is enough as the cheese melts and spreads during baking. Chop the pistachios finely so they adhere well to the Brie and are easier to eat. Start checking the bites around the 15-minute mark because oven temperatures can vary. Let the bites cool briefly after baking so the melted Brie is less likely to spill out immediately. Add the raspberry glaze just before serving to help preserve the crisp texture of the puff pastry. You can assemble the pastry cups ahead of time and refrigerate them until ready to bake. Bake shortly before serving for the best texture and add the glaze afterward. Camembert can be substituted for Brie. Soft goat cheese can also be used for a tangier flavor. Raspberry preserves work best for a smooth, concentrated glaze. Fresh raspberries can be cooked with a little sugar and strained for a homemade alternative. The optional walnuts can be omitted without changing the overall recipe. Store cooled leftovers in an airtight container in the refrigerator and reheat gently in the oven or air fryer to restore some crispness. The glaze can also be served on the side for dipping. Arrange the bites with fresh raspberries, grapes, sliced apples, crackers, and additional toasted nuts for an elegant appetizer platter. Fresh thyme sprigs make a festive finishing touch.
