Description
Pistachio-Crusted Carrot Skewers with Whipped Feta & Cranberry Drizzle turn simple roasted carrots into a colourful, flavour-packed dish. Tender carrots are coated with crunchy pistachios and honey, served over creamy whipped feta, and finished with a glossy cranberry-balsamic drizzle. The combination of sweet, tangy, creamy and crunchy makes these skewers perfect as an appetiser, side dish or vegetarian centrepiece.
Ingredients
12 medium carrots, peeled and trimmed
2 tbsp olive oil
1/2 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp dried thyme
1/2 tsp salt
1/4 tsp black pepper
1/2 cup (60 g) finely chopped pistachios
1 tbsp honey
150 g feta cheese
1/2 cup (120 g) Greek yogurt
1 tbsp olive oil
1 tbsp fresh lemon juice
1 garlic clove, minced
Pinch of black pepper
1/3 cup cranberry sauce or cranberry preserves
2 tbsp honey
1 tbsp balsamic vinegar
1 tsp fresh lemon juice
1/2 tsp fresh thyme leaves
Pinch of salt
Extra chopped pistachios
Fresh thyme or parsley
Lemon zest
Instructions
1. Preheat the oven to 425°F (220°C). Peel and trim the carrots. If any carrots are particularly thick, cut them lengthwise into smaller pieces so they cook evenly.
2. Place the carrots on a large baking sheet. Drizzle with olive oil and season with smoked paprika, garlic powder, dried thyme, salt and black pepper. Toss well until the carrots are evenly coated.
3. Roast the seasoned carrots for 20–25 minutes, until they are just tender but still firm enough to handle. Remove them from the oven and allow them to cool slightly.
4. In a small bowl, combine the finely chopped pistachios with the honey. Once the carrots are cool enough to handle, gently press the pistachio mixture onto the surface of each carrot.
5. Return the pistachio-coated carrots to the oven and roast for another 5–7 minutes, until the pistachios are lightly toasted and golden. Keep an eye on them during this final stage so the pistachios do not become too dark.
6. Add the feta, Greek yogurt, olive oil, lemon juice, minced garlic and black pepper to a blender or food processor. Blend until smooth and creamy.
7. Add the cranberry sauce, honey, balsamic vinegar, lemon juice, fresh thyme and salt to a small saucepan. Warm over low heat for 3–4 minutes, stirring until the mixture becomes smooth and glossy.
8. Carefully thread the roasted carrots onto wooden skewers. Spread the whipped feta generously across a serving platter, then arrange the carrot skewers over the top.
9. Drizzle the warm cranberry sauce generously over the carrot skewers. Finish with extra chopped pistachios, fresh thyme or parsley, and a little lemon zest. Serve warm.
Notes
Choose evenly sized carrots so they roast more evenly.
Don’t overcook the first roasting stage because the carrots need to remain firm enough to handle when adding the pistachio coating.
Press the pistachios gently onto the carrots to help the honey-coated nuts adhere.
Watch the final 5–7 minutes carefully because pistachios can toast quickly.
Spread the whipped feta underneath the carrots to create a creamy base across the serving platter.
Add the cranberry drizzle just before serving to keep the presentation fresh and glossy.
If the carrots are thick, cut them lengthwise into smaller pieces so they cook more evenly.
The whipped feta can be prepared while the carrots roast and kept ready for assembly.
Either cranberry sauce or cranberry preserves can be used for the drizzle.
The recipe specifically uses finely chopped pistachios for the coating.
Serve the warm carrot skewers over whipped feta and finish with cranberry drizzle, extra pistachios, fresh herbs and lemon zest.
