Description
Pistachio-Crusted Strawberry & Pineapple Skewers with Whipped Feta & Hot Honey are a colourful sweet-and-savory appetizer made with juicy strawberries, caramelised pineapple, a crunchy pistachio crust, creamy whipped feta, and a warm hot honey drizzle. The combination of fresh fruit, salty feta, nutty pistachios, and a hint of chilli makes these skewers especially fun for entertaining.
Ingredients
2 cups fresh strawberries, hulled
2 cups fresh pineapple chunks
8 wooden skewers
1 tbsp honey
1/2 cup (60 g) shelled pistachios, finely chopped
1/4 cup (25 g) panko breadcrumbs
1 tsp lemon zest
Pinch of sea salt
1 cup (150 g) feta cheese, crumbled
2 tbsp cream cheese, softened
1 tbsp olive oil
1 tbsp fresh lemon juice
1/4 tsp black pepper
3 tbsp honey
1/2 tsp red pepper flakes
1 tsp fresh lime juice
Pinch of sea salt
Extra crushed pistachios
Fresh mint leaves
Lemon or lime zest
Instructions
1. If using wooden skewers, soak them in water for 10 minutes. Thread the strawberries and pineapple chunks alternately onto the skewers.
2. Lightly brush the fruit skewers with 1 tbsp honey, coating the fruit evenly.
3. In a small bowl, combine the finely chopped pistachios, panko breadcrumbs, lemon zest, and sea salt.
4. Gently press the pistachio mixture onto the honey-coated sides of the fruit. The coating does not need to be completely uniform.
5. Preheat the oven to 425°F (220°C) or heat a grill pan over medium-high heat. Place the skewers on a lined baking sheet or grill pan and cook for 8–12 minutes, turning once, until the pineapple is lightly caramelised and the pistachio coating is golden.
6. Add the feta, cream cheese, olive oil, lemon juice, and black pepper to a food processor. Blend until smooth and creamy.
7. Combine the honey, red pepper flakes, lime juice, and sea salt in a small saucepan. Warm gently over low heat for 1–2 minutes, then remove from the heat.
8. Spread the whipped feta onto a serving platter. Arrange the warm fruit skewers over or alongside the feta.
9. Drizzle the warm hot honey generously over the strawberry and pineapple skewers.
10. Finish with extra crushed pistachios, fresh mint, and a little lemon or lime zest. Serve immediately while the fruit is warm and caramelised.
Notes
Cut the pineapple into similar-sized pieces so the fruit cooks more consistently.
Lightly coat the fruit with honey so the pistachio mixture has something to cling to.
Watch the pistachios carefully because they can brown quickly during the final minutes of cooking.
Blend the feta well to create a smooth, creamy base for the warm fruit.
Serve immediately while the fruit is warm and the pistachio coating is crisp.
The whipped feta can be prepared ahead and kept chilled until you’re ready to assemble the dish.
Reduce or increase the red pepper flakes in the hot honey according to your preferred level of heat.
