Description
Pistachio-Crusted Strawberry Skewers with Whipped Feta & Cranberry Drizzle are a beautiful sweet-and-savory appetizer featuring juicy roasted strawberries coated with crunchy pistachios, creamy whipped feta, and a glossy cranberry drizzle. Fresh mint and lemon zest add a bright finish to every bite.
Ingredients
2 cups (300 g) fresh strawberries, hulled
8 wooden skewers
1 tbsp honey
1 tsp fresh lemon juice
1/2 cup (60 g) shelled pistachios, finely chopped
1/4 cup (25 g) panko breadcrumbs
1 tsp lemon zest
Pinch of sea salt
1 cup (150 g) feta cheese, crumbled
2 tbsp cream cheese, softened
1 tbsp olive oil
1 tbsp fresh lemon juice
1/4 tsp black pepper
1/3 cup (50 g) dried cranberries
3 tbsp honey
2 tbsp orange juice or water
1/2 tsp balsamic vinegar
1 tsp fresh lemon juice
Extra crushed pistachios
Fresh mint leaves
Lemon zest
Instructions
1. If using wooden skewers, soak them in water for 10 minutes. Thread the strawberries onto the skewers, keeping them close together but not tightly packed.
2. In a small bowl, combine the finely chopped pistachios, panko breadcrumbs, lemon zest, and sea salt.
3. Mix the honey and lemon juice together. Lightly brush the strawberries with the honey mixture, then gently press the pistachio coating onto the sides of the strawberries.
4. Preheat the oven to 425°F (220°C). Place the skewers on a parchment-lined baking sheet and roast for 6–8 minutes, just until the pistachios are lightly toasted and the strawberries are slightly softened.
5. Add the feta, cream cheese, olive oil, lemon juice, and black pepper to a food processor. Blend until smooth and creamy.
6. Combine the dried cranberries, honey, orange juice, balsamic vinegar, and lemon juice in a small saucepan. Simmer over low heat for 4–5 minutes, gently pressing some of the cranberries with a spoon until the mixture becomes glossy and slightly thickened.
7. Spread the whipped feta onto a serving platter. Arrange the warm strawberry skewers over the feta.
8. Spoon or drizzle the warm cranberry mixture over the strawberries and whipped feta.
9. Finish with extra crushed pistachios, fresh mint leaves, and a little lemon zest.
10. Serve immediately while the pistachios are crisp and the whipped feta is creamy.
Notes
Choose firm strawberries because they hold their shape better during roasting.
Don’t overcrowd the skewers. Leave a little space between the berries for even roasting.
Watch the pistachios carefully because they can toast quickly at high heat. Remove the skewers as soon as the coating is lightly golden.
Serve immediately for the best contrast between crisp pistachios, creamy feta, and warm strawberries.
The whipped feta can be prepared ahead and kept chilled until you’re ready to assemble the skewers.
The panko breadcrumbs add extra crunch, but the pistachios can be used on their own if preferred.
The recipe is designed to roast the strawberries briefly so they become slightly softened while the pistachio coating gets lightly toasted.
