Description
Pistachio-Crusted Sweet Potato Skewers with Cranberry Drizzle combine tender caramelized sweet potatoes with a crunchy pistachio-Parmesan crust, tangy cranberry glaze, and salty feta for a colourful and festive appetizer.
Ingredients
2 large sweet potatoes (about 700 g), peeled and cut into bite-sized cubes
2 tbsp olive oil
1/2 tsp garlic powder
1/2 tsp smoked paprika
1/2 tsp dried thyme
1/2 tsp salt
1/4 tsp black pepper
3/4 cup (90 g) shelled pistachios, finely chopped
1/3 cup (35 g) panko breadcrumbs
1/4 cup (25 g) grated Parmesan cheese
1 tbsp olive oil
1/2 tsp garlic powder
1/2 tsp dried oregano
1/3 cup (80 g) cranberry sauce
1 tbsp maple syrup
1 tbsp fresh orange juice
1 tsp balsamic vinegar
1/2 tsp Dijon mustard
2 tbsp crumbled feta cheese
1 tbsp fresh parsley, chopped
1 tsp fresh thyme leaves
1 tbsp extra chopped pistachios
Instructions
1. Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
2. Add the sweet potato cubes to a large bowl and toss them with olive oil, garlic powder, smoked paprika, dried thyme, salt, and black pepper until evenly coated.
3. Spread the seasoned sweet potatoes in a single layer on the prepared baking sheet, leaving space between the pieces so they roast instead of steam. Roast for 25–30 minutes, turning halfway through, until tender and lightly caramelized around the edges. Remove from the oven and let cool for a few minutes.
4. While the sweet potatoes are roasting, combine the finely chopped pistachios, panko breadcrumbs, Parmesan cheese, olive oil, garlic powder, and dried oregano in a bowl. Stir until evenly combined and lightly crumbly.
5. Thread the roasted sweet potato cubes onto small appetizer skewers, leaving a little space between the pieces. Arrange the skewers on a clean parchment-lined baking sheet.
6. Gently press the pistachio mixture onto the exposed surfaces of the roasted sweet potato pieces. Press firmly enough for the coating to adhere without crushing the tender sweet potatoes.
7. Return the skewers to the oven and bake for 8–10 minutes, until the pistachio coating becomes golden, fragrant, and crisp. Watch carefully during the final few minutes so the nuts do not over-brown.
8. While the skewers finish baking, add the cranberry sauce, maple syrup, orange juice, balsamic vinegar, and Dijon mustard to a small saucepan. Warm over low heat for 3–5 minutes, stirring occasionally, until smooth, glossy, and slightly loosened.
9. Arrange the warm sweet potato skewers on a serving platter. Drizzle the cranberry sauce lightly over the skewers, allowing some of the glaze to fall naturally over the crispy pistachio coating.
10. Sprinkle the skewers with crumbled feta, fresh parsley, thyme leaves, and extra chopped pistachios. Serve immediately while the sweet potatoes are warm and the pistachio coating is crisp.
Notes
Cut the sweet potatoes into evenly sized cubes so they roast at the same rate and are easy to thread onto the skewers.
Don’t overcrowd the baking sheet. Leave space around the sweet potatoes so they can caramelize instead of steaming.
Finely chop the pistachios so the crust adheres more easily to the roasted sweet potatoes and creates an even coating.
Press the pistachio mixture gently but firmly onto the sweet potatoes so it stays attached during the second bake.
Keep a close eye on the skewers during the final bake because pistachios can brown quickly.
Serve the skewers immediately after baking for the best contrast between the tender sweet potato and crispy pistachio crust.
Adjust the amount of cranberry drizzle depending on how sweet or tangy you prefer the finished appetizer.
You can prepare the roasted sweet potatoes and pistachio mixture ahead of time. Assemble the skewers and add the crust shortly before the final bake.
Pecans, walnuts, or almonds can be substituted for pistachios if desired.
The Parmesan can be omitted or replaced with another finely grated hard cheese.
Homemade cranberry sauce works beautifully. If it is particularly thick, warm it with a small splash of orange juice before drizzling.
Crumbled goat cheese can be substituted for feta and pairs especially well with the sweet potato and cranberry flavours.
For extra heat, add a pinch of red pepper flakes to the sweet potato seasoning or cranberry drizzle.
Serve as part of a festive appetizer spread with hummus, whipped feta, roasted vegetables, olives, fresh salad, crackers, or toasted bread.
