Pistachio Feta Bites with Blackberry Honey Glaze

Description

Crispy pistachio-crusted feta bites drizzled with a jewel-toned blackberry honey glaze—a stunning 20-minute appetizer that’s salty, sweet, crunchy, and creamy!


Ingredients

200 g feta cheese, cut into cubes

½ cup (60 g) pistachios, finely crushed

ÂĽ cup (30 g) flour

1 egg, beaten

½ tsp black pepper

2 tbsp olive oil (for frying)

½ cup (100 g) blackberries

2 tbsp (30 ml) honey

1 tbsp lemon juice

Fresh thyme, to garnish

Cracked black pepper, to garnish


Instructions

1. Pat the feta cubes dry and lightly coat each one in flour.

2. Dip the floured feta cubes into the beaten egg, letting excess drip off.

3. Roll firmly in the crushed pistachios (mixed with black pepper) until fully coated on all sides.

4. Heat olive oil in a non-stick skillet over medium heat until shimmering.

5. Carefully fry the pistachio-coated feta cubes for 2–3 minutes total, gently turning to brown all sides. Transfer to a paper towel–lined plate.

6. In a small saucepan, cook the blackberries with honey and lemon juice over medium-low heat for 3–5 minutes, gently pressing with a spoon, until softened and slightly thickened.

7. Strain the glaze for a smooth finish or leave chunky for rustic texture.

8. Arrange warm feta bites on a serving plate and drizzle the blackberry honey glaze generously over the top.

9. Garnish with fresh thyme and cracked black pepper.

10. Serve immediately while the cheese is still warm.

Notes

Use a firm block of feta—not crumbled—so it holds shape during frying.

Pat the feta dry before coating for the best crust adhesion.

Cold feta straight from the fridge fries best.

Don’t overcrowd the pan; space means crispy.

For a gluten-free version, swap regular flour for rice or almond flour.

The blackberry glaze can be made 3 days ahead.
