Description

A creamy, comforting pasta dish featuring tender fettuccine coated in a silky pumpkin Alfredo sauce with Parmesan, nutmeg, and thyme, finished with fragrant crispy sage and extra Parmesan.

Ingredients

For the Fettuccine:

12 oz fettuccine pasta (340 g)

1 tbsp salt for pasta water (18 g)

For the Pumpkin Alfredo Sauce:

2 tbsp unsalted butter (28 g)

2 cloves garlic, minced (6 g)

1 cup pumpkin purée (240 g)

1 cup heavy cream (240 ml)

Âľ cup freshly grated Parmesan cheese (75 g)

½ tsp ground nutmeg (1 g)

½ tsp dried thyme (1 g)

½ tsp salt (3 g)

ÂĽ tsp black pepper (1 g)

½ cup reserved pasta water (120 ml)

For the Crispy Sage:

2 tbsp unsalted butter (28 g)

12 fresh sage leaves (about 5 g)

ÂĽ cup grated Parmesan cheese, for serving (25 g)

Freshly ground black pepper, for garnish

Instructions

1. Bring a large pot of salted water to a boil. Add the fettuccine and cook according to the package directions until al dente. Before draining, reserve ½ cup of pasta water (120 ml). Drain the pasta and set aside.

2. Melt 2 tablespoons of butter in a large skillet over medium heat. Add the minced garlic and cook for about 30 seconds, stirring gently, until fragrant without letting the garlic brown.

3. Stir the pumpkin purée, heavy cream, nutmeg, dried thyme, salt, and black pepper into the skillet. Bring the mixture to a gentle simmer and cook for 3–4 minutes, stirring occasionally, until warmed through and slightly thickened.

4. Reduce the heat to low and gradually stir in the freshly grated Parmesan cheese. Continue stirring until the cheese melts and the sauce becomes smooth and creamy. Add a little reserved pasta water at a time, stirring between additions, until the sauce reaches a silky consistency that will coat the pasta evenly.

5. Add the cooked fettuccine to the skillet and gently toss until every strand is coated in the pumpkin Alfredo sauce. Cook for another 1–2 minutes over low heat, adding a small splash of pasta water if the sauce becomes too thick.

6. While the pasta is finishing, melt 2 tablespoons of butter in a small skillet over medium heat. Add the fresh sage leaves and cook for 1–2 minutes per side, until the leaves are crisp and lightly browned. Transfer them to a plate lined with paper towel to remove excess butter.

7. Divide the creamy pumpkin fettuccine among serving plates. Top each portion with crispy sage leaves and freshly grated Parmesan. Finish with a little freshly ground black pepper and serve immediately while the pasta is warm and creamy.

Notes

Cook the pasta al dente so it holds its texture when tossed with the warm Alfredo sauce.

Use freshly grated Parmesan because it melts more smoothly into the sauce and gives it a richer flavour.

Add reserved pasta water gradually to loosen the sauce without making it watery.

Keep the heat low after adding the Parmesan to help keep the sauce smooth and creamy.

Watch the sage closely because the leaves cook quickly. Remove them as soon as they become crisp and lightly browned.

Serve the pasta immediately for the creamiest texture.

Plain canned pumpkin purée works well. Use pumpkin purée rather than pumpkin pie filling, which contains added sweeteners and spices.

The pumpkin Alfredo sauce can be prepared shortly ahead, but it is best served fresh. If it thickens while standing, gently warm it and stir in a small amount of reserved pasta water.

Linguine or tagliatelle can be used instead of fettuccine, and short pasta can also be used if preferred.

The pasta can be enjoyed without crispy sage, but fresh sage adds a fragrant finishing touch.

Serve with a simple green salad or lightly dressed vegetables to balance the richness of the sauce.
