Description
Quick Cranberry Balsamic Flatbread for an Easy Lunch is a delicious sweet-and-savory flatbread topped with tangy cranberry sauce, creamy goat cheese, melted mozzarella, crunchy walnuts, and thinly sliced red onion. Fresh arugula adds a peppery bite, while a glossy cranberry balsamic drizzle brings everything together.
Ingredients
2 large flatbreads or naan breads
1/2 cup (120 g) cranberry sauce
1/2 cup (60 g) shredded mozzarella cheese
4 oz (115 g) goat cheese, crumbled
1/3 cup (40 g) walnuts, roughly chopped
1/4 small red onion, thinly sliced
2 cups (60 g) fresh baby arugula
1 tbsp fresh rosemary, finely chopped
1 tbsp olive oil
2 tbsp balsamic vinegar
1 tbsp cranberry sauce
1 tsp honey
1/2 tsp Dijon mustard
Pinch of salt
Instructions
1. Preheat your oven to 400°F (200°C). Place the flatbreads or naan breads on a large baking sheet lined with parchment paper.
2. In a small bowl, combine the cranberry sauce with 1 tbsp olive oil. Stir until smooth and easy to spread. If the cranberry sauce is very thick, let it sit at room temperature for a few minutes before mixing.
3. Add the balsamic vinegar, cranberry sauce, honey, Dijon mustard, and a pinch of salt to a small saucepan. Warm over low heat for 2–3 minutes, stirring occasionally, until the mixture becomes slightly thickened and glossy. Remove from the heat and set aside.
4. Spread the cranberry mixture evenly over each flatbread, leaving a small border around the edges.
5. Sprinkle the shredded mozzarella evenly over the cranberry layer. Add the crumbled goat cheese on top, distributing it across the surface.
6. Scatter the thinly sliced red onion, chopped walnuts, and fresh rosemary over the cheese.
7. Bake for 10–12 minutes, until the edges are crisp and golden and the mozzarella is completely melted and lightly browned. Watch the flatbread toward the end so the edges don’t become overly dark.
8. Remove the flatbread from the oven and immediately scatter the fresh baby arugula over the top. The warmth from the flatbread will soften the arugula slightly while keeping its fresh, peppery flavour.
9. Drizzle the cranberry balsamic mixture lightly over the flatbread. Add more or less depending on how sweet and tangy you prefer it.
10. Let the flatbread cool for 2–3 minutes, then slice it into wedges. Serve warm while the cheese is creamy, the edges are crisp, and the walnuts are still crunchy.
Notes
Use a sturdy flatbread or naan that can support the toppings while remaining crisp around the edges.
Don’t overload the flatbread with sauce or cheese. A moderate amount helps it bake evenly and prevents the base from becoming soggy.
Toast the walnuts directly on the flatbread while it bakes to bring out their natural flavour and crunch.
Add the arugula after baking so it stays fresh and only softens slightly from the residual heat.
Watch the edges closely near the end of baking because flatbreads can brown quickly.
Adjust the cranberry balsamic drizzle to taste. Add just enough to provide sweetness and acidity without making the flatbread soggy.
Naan can be used instead of flatbread for a slightly thicker and softer base with crispy edges.
Feta, Brie, or ricotta can be substituted for goat cheese. Brie creates an especially creamy and rich topping.
If using fresh cranberries instead of cranberry sauce, cook them with a little sugar and water until softened and jammy before using.
Prepare the cranberry base, balsamic drizzle, and toppings ahead of time, then assemble and bake shortly before serving.
For an extra-crispy base, use a preheated baking sheet or pizza stone and avoid adding too much sauce.
Sliced pear, caramelized onions, apples, fresh thyme, pecans, or a small drizzle of hot honey can also complement the cranberry and goat cheese.
Serve with a simple green salad, roasted vegetables, or light soup for lunch or dinner. For entertaining, slice into smaller pieces and arrange on a serving platter.
