Description
Reuben Bake with Layers of Corned Beef, Sauerkraut & Swiss Cheese takes all the classic flavours of a Reuben sandwich and turns them into a warm, cheesy, comforting bake. Layers of rye bread, savoury corned beef, tangy sauerkraut, Swiss cheese and creamy Thousand Island dressing come together under a golden, crispy topping.
Ingredients
1 lb (450 g) sliced corned beef
2 cups sauerkraut, drained and squeezed dry
8 oz (225 g) Swiss cheese, shredded or sliced
4 slices rye bread, cut into small cubes
1/2 cup Thousand Island dressing
1/4 cup sour cream
1 tbsp Dijon mustard
2 tbsp butter, melted
1/2 tsp garlic powder
1/4 tsp black pepper
2 tbsp fresh parsley, chopped
Instructions
1. Preheat the oven to 375°F (190°C). Lightly grease a medium baking dish and set it aside.
2. In a small bowl, whisk together the Thousand Island dressing, sour cream and Dijon mustard until smooth and well combined.
3. Place the cubed rye bread in a bowl. Drizzle with the melted butter and sprinkle with garlic powder and black pepper. Toss until the bread cubes are evenly coated.
4. Spread half of the buttered rye bread cubes across the bottom of the prepared baking dish. Add half of the sliced corned beef, followed by half of the drained and squeezed sauerkraut.
5. Drizzle half of the creamy Thousand Island dressing evenly over the sauerkraut. Add half of the Swiss cheese over the top.
6. Repeat the layering process with the remaining corned beef, sauerkraut, creamy dressing and Swiss cheese. Try to distribute each layer evenly so every serving gets a little of each ingredient.
7. Scatter the remaining buttered rye bread cubes over the top of the bake. These will become golden and crisp while the cheese melts underneath.
8. Cover the baking dish loosely with foil and bake for 20 minutes. Remove the foil and continue baking for another 10–15 minutes, until the Swiss cheese is melted and bubbling and the edges are golden.
9. Allow the Reuben bake to rest for 5–10 minutes before serving. Garnish with fresh parsley and serve with extra Thousand Island dressing if desired.
Notes
Drain and squeeze the sauerkraut well to remove excess moisture and help prevent the bake from becoming too watery.
Divide the ingredients evenly between layers so the flavours are distributed throughout the dish.
Bake covered first to heat everything through, then uncover to allow the cheese and rye bread to become golden.
Let the bake rest briefly before serving to make it easier to serve.
Extra Thousand Island dressing can be served alongside for a creamier Reuben-style finish.
Serve with a simple green salad or fresh vegetables for a lighter contrast.
