Ingredients
For the Roasted Vegetables
3 medium beets, peeled and cut into wedges (450 g)
2 large sweet potatoes, peeled and cut into bite-sized cubes (700 g)
2 tbsp olive oil (30 ml)
1 tsp garlic powder (3 g)
1/2 tsp smoked paprika (1 g)
1/2 tsp dried thyme (1 g)
3/4 tsp kosher salt (4 g)
1/2 tsp black pepper (1 g)
For the Whipped Ricotta
1 1/2 cups ricotta cheese (375 g)
2 tbsp olive oil (30 ml)
1 tbsp fresh lemon juice (15 ml)
1 tsp honey (7 g)
1 small garlic clove, minced (3 g)
1/4 tsp kosher salt (1 g)
1/4 tsp black pepper (0.5 g)
For the Toppings
2 ripe avocados, sliced (300 g)
1/2 cup shelled pistachios, roughly chopped (65 g)
2 tbsp hot honey (42 g)
2 tbsp fresh parsley, chopped (8 g)
1 tbsp fresh mint, chopped (3 g)
1 tsp lemon zest (2 g)
For the Lemon Herb Drizzle
2 tbsp olive oil (30 ml)
1 tbsp fresh lemon juice (15 ml)
1 tsp honey (7 g)
1/2 tsp Dijon mustard (3 g)
1/4 tsp salt (1 g)
Instructions
1. Preheat the oven to 425°F (220°C) and line a large baking sheet with parchment paper.
2. Place the beets and sweet potatoes in a large bowl. Add the olive oil, garlic powder, smoked paprika, dried thyme, kosher salt, and black pepper. Toss thoroughly until evenly coated.
3. Arrange the vegetables in a single layer on the prepared baking sheet, keeping the beets and sweet potatoes slightly separated if possible.
4. Roast for 30–40 minutes, turning the vegetables halfway through, until tender in the centre and caramelised around the edges.
5. While the vegetables roast, add the ricotta, olive oil, lemon juice, honey, minced garlic, salt, and black pepper to a food processor. Blend for 1–2 minutes until smooth, creamy, and slightly whipped.
6. Place the chopped pistachios in a dry skillet over medium-low heat. Toast for 2–3 minutes, stirring frequently, until fragrant and lightly toasted. Remove from the heat and let cool.
7. Make the lemon herb drizzle by whisking together the olive oil, fresh lemon juice, honey, Dijon mustard, and salt until smooth and well combined.
8. Slice the avocados just before assembling the dish to keep them fresh, creamy, and vibrant.
9. Spread the whipped ricotta over a large serving platter or divide it between individual plates.
10. Arrange the roasted beets and sweet potatoes over the ricotta, then tuck the sliced avocado between the roasted vegetables.
11. Scatter the toasted pistachios generously over the top.
12. Drizzle with the hot honey and lemon herb dressing, then garnish with fresh parsley, mint, and lemon zest.
13. Serve warm or slightly cooled.
Notes
Cut the sweet potatoes into similar-sized pieces so they roast evenly.
Spread the vegetables into a single layer and avoid overcrowding the baking sheet so they caramelise instead of steaming.
Toast the pistachios over medium-low heat and stir frequently because they can brown quickly.
Blend the ricotta long enough to create a smooth, creamy, airy texture.
Slice the avocado shortly before serving for the freshest texture and appearance.
The roasted beets and sweet potatoes can be prepared ahead and gently rewarmed before assembling.
The whipped ricotta can be prepared ahead and kept chilled until needed. Give it a quick stir before serving.
Toasted walnuts, pecans, or almonds can be used instead of pistachios.
Use regular honey instead of hot honey for a milder finish, or add a small pinch of chilli flakes for more heat.
The dish can be served warm or slightly cooled.
For the best presentation, spread the whipped ricotta across a wide platter and arrange the vegetables and avocado over the top rather than mixing everything together.
