Description
A colorful and hearty roasted vegetable bake featuring caramelized cauliflower, sweet potatoes, carrots, parsnips, and red onion, topped with creamy feta sauce, dried cranberries, toasted nuts, and fresh herbs. A comforting vegetarian main or festive side dish.
Ingredients
For the Roasted Vegetables
1 large head cauliflower (about 700 g), cut into florets
2 medium sweet potatoes (about 500 g), peeled and diced
3 medium carrots (about 300 g), peeled and sliced
2 medium parsnips (about 250 g), peeled and sliced
1 small red onion, cut into wedges
3 tbsp olive oil
1 tsp garlic powder
1 tsp dried thyme
1/2 tsp smoked paprika
1/2 tsp ground cumin
1/2 tsp salt
1/4 tsp black pepper
For the Creamy Feta Sauce
4 oz (115 g) feta cheese, crumbled
1/2 cup (120 g) Greek yogurt
2 tbsp olive oil
1 tbsp fresh lemon juice
1 garlic clove, minced
2 tbsp water, as needed
For the Topping
1/3 cup (50 g) dried cranberries
1/3 cup (40 g) walnuts or pecans, roughly chopped
2 tbsp fresh parsley, chopped
1 tbsp fresh dill, chopped
1 tsp fresh thyme leaves
1 tbsp pumpkin seeds, optional
Instructions
1. Preheat the oven to 425°F (220°C). Lightly grease a large baking dish or rimmed baking sheet.
2. Add the cauliflower florets, sweet potatoes, carrots, parsnips, and red onion to a large bowl.
3. Drizzle the vegetables with olive oil and sprinkle with garlic powder, dried thyme, smoked paprika, cumin, salt, and black pepper. Toss thoroughly until evenly coated.
4. Spread the seasoned vegetables in a single layer on a large baking sheet, leaving space between the pieces so they roast rather than steam.
5. Roast for 30–35 minutes, turning the vegetables halfway through, until tender and golden brown around the edges.
6. While the vegetables roast, prepare the feta sauce. Add the feta, Greek yogurt, olive oil, lemon juice, garlic, and water to a food processor.
7. Blend until smooth and creamy. Add another small splash of water if needed until the sauce reaches a thick, spoonable consistency.
8. Transfer the roasted vegetables to a lightly greased baking dish and spread them evenly.
9. Spoon the creamy feta sauce over the roasted vegetables, spreading it gently while leaving some vegetables exposed.
10. Return the baking dish to the oven and bake uncovered for 10–15 minutes, until the feta sauce is heated through and lightly golden in spots.
11. While the bake finishes, place the chopped walnuts or pecans in a dry skillet over medium-low heat. Toast for 3–4 minutes, stirring frequently, until fragrant and lightly golden. Remove from the heat and let cool slightly.
12. Remove the vegetable bake from the oven and scatter the dried cranberries evenly over the top.
13. Sprinkle the toasted walnuts or pecans over the bake, followed by fresh parsley, dill, and thyme. Add the optional pumpkin seeds for extra crunch.
14. Finish with a small drizzle of olive oil and a squeeze of fresh lemon juice.
15. Serve warm as a hearty vegetarian main dish or colorful side dish.
Notes
Do not overcrowd the baking sheet. Spread the vegetables in a single layer so they roast and caramelize properly. Cut the vegetables into similar-sized pieces so they cook consistently. Use full-fat Greek yogurt for a richer and creamier feta sauce. Toast the walnuts or pecans before serving to bring out their flavor and aroma. Add the cranberries at the end to preserve their chewy texture and bright flavor. A squeeze of fresh lemon juice balances the sweetness of the root vegetables and cranberries. You can roast the vegetables and prepare the feta sauce ahead of time. Store them separately in the refrigerator, then assemble and bake when ready to serve. Turnips, rutabaga, winter squash, or Yukon Gold potatoes can be substituted for some of the root vegetables. Soft goat cheese can be used instead of feta for a creamier, tangier sauce. Toasted almonds, hazelnuts, or pumpkin seeds can replace the walnuts or pecans. For a less sweet version, omit the dried cranberries or replace them with fresh pomegranate seeds. Store leftovers in an airtight container in the refrigerator and reheat gently in the oven or microwave. Serve with warm crusty bread, quinoa, couscous, or a simple green salad for a complete vegetarian meal. The bake also pairs well with roasted chicken, turkey, salmon, or grilled meats. For an even heartier vegetarian meal, serve alongside chickpeas, lentils, or a grain salad.
