Roasted Pumpkin & Sweet Potato Stack with Whipped Feta, Cranberries, Pecans & Honey Herb Glaze is an elegant vegetarian dish layered with caramelized pumpkin, tender sweet potato, roasted eggplant, creamy whipped feta, crunchy pecans, tart dried cranberries, and a glossy cranberry-honey glaze.
Ingredients
2 cups (300 g) pumpkin or butternut squash, peeled and cut into thin slices
2 medium sweet potatoes (about 450 g), peeled and cut into thin rounds
1 medium eggplant (about 300 g), thinly sliced
2 tbsp olive oil
1 tsp dried thyme
1/2 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
8 oz (225 g) feta cheese, crumbled
1/3 cup (80 g) Greek yogurt
1 tbsp olive oil
1 tbsp fresh lemon juice
1 small garlic clove, minced
1–2 tbsp water, as needed
1/3 cup (90 g) cranberry sauce
2 tbsp honey
1 tbsp maple syrup
1 tbsp fresh orange juice
1 tsp balsamic vinegar
1/2 tsp fresh thyme leaves
Pinch of black pepper
1/2 cup (60 g) pecans, roughly chopped
1/4 cup (35 g) dried cranberries
2 tbsp fresh parsley, finely chopped
1 tbsp fresh thyme leaves
1 tbsp honey, for drizzling
Instructions
1. Preheat your oven to 425°F (220°C). Line two large baking sheets with parchment paper. Using two pans gives the vegetables enough room to roast without becoming overcrowded.
2. Place the pumpkin, sweet potato, and eggplant slices in a large bowl. Drizzle with olive oil and sprinkle with dried thyme, smoked paprika, garlic powder, salt, and black pepper. Gently toss until the vegetables are evenly coated.
3. Arrange the vegetables in a single layer across the prepared baking sheets, leaving space between the slices so the edges can caramelize properly. Roast for 25–35 minutes, turning the slices halfway through cooking, until tender and golden around the edges. Check the eggplant during roasting and remove it once it becomes golden and tender.
4. While the vegetables roast, add the feta, Greek yogurt, olive oil, fresh lemon juice, and minced garlic to a food processor. Blend for 1–2 minutes until the mixture becomes smooth, creamy, and fluffy.
5. Add water 1 tablespoon at a time as needed until the whipped feta reaches a soft, spreadable consistency.
6. Place the chopped pecans in a dry skillet over medium-low heat. Toast for 3–4 minutes, stirring frequently, until fragrant and lightly golden. Remove from the heat and let them cool slightly.
7. Add the cranberry sauce, honey, maple syrup, orange juice, balsamic vinegar, fresh thyme, and black pepper to a small saucepan. Warm over low heat for 3–5 minutes, stirring occasionally, until smooth, glossy, and slightly thickened. Remove from the heat and keep warm.
8. Place one roasted sweet potato slice on a serving plate. Spread a layer of whipped feta over the top. Add a layer of roasted pumpkin followed by another thin layer of whipped feta. Continue layering the roasted eggplant and sweet potato with whipped feta until you create a tall, attractive stack.
9. Spoon the warm cranberry-honey glaze generously over the top of the vegetable stack, allowing some of the glossy glaze to drip naturally down the sides.
10. Scatter the toasted pecans and dried cranberries over the top of the stack and around its base.
11. Finish with fresh parsley and thyme leaves. Drizzle lightly with honey for an extra glossy and subtly sweet finish.
12. Let the vegetable stack rest for 5 minutes before serving. Serve warm or slightly cooled, making sure each portion includes layers of roasted vegetables, whipped feta, crunchy pecans, dried cranberries, and cranberry glaze.
Notes
Slice the vegetables evenly so they roast at roughly the same rate.
Don’t overcrowd the baking sheets. Give the vegetables enough space to roast and caramelize instead of steaming.
Watch the eggplant because it can become tender faster than the pumpkin and sweet potato.
Blend the feta thoroughly so the whipped feta becomes smooth, creamy, and easy to spread.
Toast the pecans gently over medium-low heat and stir frequently to prevent burning.
Keep the cranberry-honey glaze slightly warm so it spreads easily and creates attractive drips over the stack.
Don’t make the whipped feta layers too thick. Thin layers help the stack stay balanced and easier to slice.
Assemble the vegetable stacks shortly before serving to keep the roasted vegetables warm and prevent the layers from becoming overly soft.
Butternut squash can be used instead of pumpkin and works especially well with the whipped feta, cranberries, pecans, and honey glaze.
The roasted vegetables can be prepared ahead and gently reheated before assembling.
The whipped feta can be prepared ahead and stored covered in the refrigerator. Allow it to sit out briefly before assembling so it becomes easier to spread.
Toasted walnuts can be substituted for pecans.
Cranberry sauce is recommended for the glaze because it provides the smooth consistency and sweetness needed. Fresh cranberries would require additional cooking and sweetening.
Use evenly sliced vegetables and avoid overly thick feta layers to help keep the stack from falling apart.
Serve with a simple green salad, lightly dressed arugula, quinoa, couscous, warm crusty bread, or chickpea salad.
