Roasted Strawberry Whipped Ricotta Toast is a simple, elegant toast made with creamy whipped ricotta, juicy roasted strawberries and crisp sourdough. The strawberries are roasted with honey, balsamic vinegar and vanilla until glossy and syrupy, then spooned over the ricotta for a delicious combination of sweet, tangy and creamy flavours.
Ingredients
1 cup fresh strawberries, hulled and halved
1 tablespoon honey
1 tablespoon balsamic vinegar
1 teaspoon vanilla extract
1 cup whole-milk ricotta cheese
1 tablespoon maple syrup
1/2 teaspoon lemon zest
Pinch of salt
4 slices sourdough or artisan bread
1 tablespoon olive oil or butter, for toasting
Fresh mint or basil, for garnish
Extra honey or maple syrup, optional
Instructions
1. Preheat the oven to 400°F (200°C).
2. Place the halved strawberries in a small baking dish. Add the honey, balsamic vinegar and vanilla extract, then gently toss until the strawberries are evenly coated.
3. Roast the strawberries for 15–18 minutes, until softened and glossy with a rich, syrupy glaze. Keep the juices from the baking dish.
4. Add the whole-milk ricotta, maple syrup, lemon zest and a pinch of salt to a bowl. Whisk vigorously or blend until smooth, light and creamy.
5. Toast the sourdough or artisan bread slices until golden and crisp around the edges. Brush lightly with olive oil or butter if desired.
6. Spread a generous layer of whipped ricotta over each slice of toast.
7. Spoon the warm roasted strawberries over the ricotta, adding some of the balsamic juices from the baking dish.
8. Garnish with fresh mint or basil. Drizzle with a little honey or maple syrup if desired.
9. Serve immediately while the toast is crisp and the strawberries are still warm.
Notes
Use ripe strawberries for the best roasted texture and flavour.
Don’t skip the balsamic vinegar, as it adds a tangy contrast to the sweet strawberries and honey.
Whip the ricotta well so it becomes smooth, light and creamy.
Toast the bread until crisp enough to hold the ricotta and juicy strawberries.
