Ingredients

For the Sweet Potato Boats:

4 medium sweet potatoes

1 tbsp olive oil

Salt and black pepper, to taste

For the Spinach Filling:

3 cups fresh spinach

1 tbsp olive oil

1 small onion, finely diced

2 garlic cloves, minced

1 tsp dried thyme

Salt and black pepper, to taste

For the Cheese Topping:

200 g Brie cheese, sliced or cubed

For the Walnut Crumble:

1/3 cup walnuts, roughly chopped

2 tbsp breadcrumbs

1 tbsp butter, melted

1 tbsp honey

Pinch of sea salt

Optional:

Fresh thyme leaves

Extra Brie pieces

Orange zest

Chili flakes

Microgreens

Instructions

1. Preheat the oven to 400°F (200°C/180°C fan). Rub the sweet potatoes with olive oil, season with salt and pepper, then roast for 45 to 50 minutes until tender.

2. Meanwhile, heat the olive oil in a skillet over medium heat. Cook the onion until softened, then stir in the garlic and cook for 30 seconds.

3. Add the spinach and thyme, cooking until the spinach wilts. Season with salt and pepper, then remove from the heat.

4. Slice the roasted sweet potatoes open lengthwise and gently fluff the flesh with a fork.

5. Fill each sweet potato with the spinach mixture and top with slices or cubes of Brie.

6. In a small bowl, mix together the walnuts, breadcrumbs, melted butter, honey and sea salt.

7. Sprinkle the walnut crumble evenly over each stuffed sweet potato.

8. Return to the oven and bake for 10 to 12 minutes until the Brie has melted and the topping is golden.

9. Garnish with fresh thyme, orange zest, chili flakes, extra Brie or microgreens if desired. Serve warm.

Notes

Choose sweet potatoes of similar size so they cook evenly.

Roast until fork-tender before stuffing.

Use room-temperature Brie for faster melting.

Store leftovers in the refrigerator for up to 4 days.

Reheat in the oven for the best texture.
