Description
A colorful, satisfying salad featuring tender caramelized sweet potatoes, lightly crisp roasted chickpeas, crunchy cucumber, sharp red onion, creamy feta, and fresh herbs. A bright lemon honey dressing brings everything together with a delicious balance of sweet, tangy, and savory flavors.
Ingredients
For the Roasted Sweet Potatoes & Chickpeas
2 large sweet potatoes (about 600 g), peeled and cut into bite-sized cubes
1 can (15 oz / 425 g) chickpeas, drained, rinsed, and patted dry
2 tbsp olive oil
1/2 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp ground cumin
1/2 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
For the Salad
1 large cucumber (about 250 g), diced
1/2 small red onion, thinly sliced
3/4 cup (110 g) crumbled feta cheese
1/4 cup (15 g) fresh parsley, chopped
2 tbsp fresh mint, chopped
2 tbsp pomegranate seeds, optional
For the Lemon Honey Dressing
3 tbsp extra-virgin olive oil
2 tbsp fresh lemon juice
1 tsp honey
1 tsp Dijon mustard
1 small garlic clove, minced
1/2 tsp dried oregano
1/4 tsp salt
1/4 tsp black pepper
Instructions
1. Preheat the oven to 425°F (220°C) and line a large baking sheet with parchment paper.
2. Place the cubed sweet potatoes and drained chickpeas in a large bowl. Add olive oil, smoked paprika, garlic powder, cumin, dried oregano, salt, and black pepper. Toss thoroughly until evenly coated.
3. Spread the sweet potatoes and chickpeas onto the prepared baking sheet in a single layer, leaving space between the pieces so they roast rather than steam.
4. Roast for 30–35 minutes, tossing halfway through, until the sweet potatoes are tender and caramelized and the chickpeas are lightly crisp.
5. While the vegetables roast, dice the cucumber, thinly slice the red onion, and chop the fresh parsley and mint.
6. Make the lemon honey dressing by whisking together the extra-virgin olive oil, lemon juice, honey, Dijon mustard, minced garlic, dried oregano, salt, and black pepper until smooth and emulsified.
7. Remove the roasted sweet potatoes and chickpeas from the oven and let them cool for 5–10 minutes. They should remain warm but not be hot enough to wilt the fresh vegetables.
8. Add the cucumber, red onion, parsley, and mint to a large serving bowl. Add the warm roasted sweet potatoes and chickpeas and gently combine.
9. Scatter the crumbled feta over the salad, leaving some larger pieces visible on top.
10. Drizzle the lemon honey dressing evenly over the salad and toss gently until everything is lightly coated, being careful not to break up the feta too much.
11. Finish with extra feta, fresh parsley, and mint. Sprinkle with optional pomegranate seeds for a bright pop of color and sweet-tart flavor.
12. Serve immediately while the sweet potatoes are slightly warm and the chickpeas retain their crisp texture, or chill and serve as a refreshing make-ahead lunch.
Notes
Pat the chickpeas thoroughly dry before roasting to help them become crisp. Do not overcrowd the baking sheet. Leave space between the sweet potatoes and chickpeas for better caramelization. Cut the sweet potatoes into similar-sized cubes so they roast evenly. Let the roasted ingredients cool slightly before combining them with the cucumber and herbs to keep the fresh vegetables crisp. Dress the salad just before serving for the best texture. Use freshly squeezed lemon juice for a brighter, cleaner dressing flavor. Add pomegranate seeds at the end for a juicy, tart-sweet finishing touch. You can roast the sweet potatoes and chickpeas and prepare the dressing ahead of time. Store the components separately and combine shortly before serving. Canned chickpeas work perfectly; drain, rinse, and dry them thoroughly before roasting. Goat cheese or crumbled queso fresco can be substituted for feta. Add grilled chicken, lentils, quinoa, or extra chickpeas for a more substantial meal. The salad can be served slightly warm or chilled. For leftovers, store the salad in an airtight container in the refrigerator and keep the dressing separate when possible. Serve with warm pita, flatbread, or crusty bread for a satisfying lunch. This salad also pairs well with grilled chicken, roasted fish, hummus, olives, and other Mediterranean-inspired dishes.
