Ingredients
For the Roasted Tomatoes

2 tbsp olive oil
3 garlic cloves, lightly crushed
1/2 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
For the Burrata Dip
8 oz (225 g) burrata cheese
1/3 cup (80 g) cream cheese or mascarpone
1 tbsp extra-virgin olive oil
1 tbsp fresh lemon juice
1 small garlic clove, minced
1/4 tsp salt
1/4 tsp black pepper
For the Chilli Honey
3 tbsp honey
1/2 tsp red pepper flakes
1/4 tsp smoked paprika
For the Topping
1/3 cup (40 g) shelled pistachios, roughly chopped
2 tbsp fresh basil leaves, torn
1 tsp lemon zest
Pinch of flaky sea salt
For Serving
Warm crusty bread, toasted baguette slices, or crackers
Instructions
1. Preheat the oven to 425°F (220°C). Place the cherry tomatoes and lightly crushed garlic in a small baking dish.
2. Drizzle the tomatoes with olive oil and season with dried oregano, salt, and black pepper.
3. Roast for 20–25 minutes, until the tomatoes soften, burst, and develop lightly caramelized edges.
4. Add the burrata, cream cheese or mascarpone, extra-virgin olive oil, lemon juice, minced garlic, salt, and black pepper to a food processor.
5. Blend briefly until creamy and smooth, keeping the mixture thick enough to remain spoonable rather than turning into a thin sauce.
6. Place the chopped pistachios in a dry skillet over medium-low heat. Toast for 3–4 minutes, stirring frequently, until fragrant and lightly golden. Remove from the heat and cool slightly.
7. Warm the honey gently in a small saucepan over low heat for about 1 minute. Stir in the red pepper flakes and smoked paprika.
8. Remove the chilli honey from the heat and let it sit for a few minutes so the chilli and paprika can infuse the honey.
9. Spread the creamy burrata mixture into a shallow serving dish.
10. Spoon the warm roasted tomatoes and roasted garlic over the center, allowing some of the tomato juices to mingle with the creamy cheese.
11. Scatter the toasted pistachios generously over the roasted tomatoes and burrata.
12. Drizzle the warm chilli honey over the entire dip, adding a little extra around the roasted tomatoes according to your preferred sweetness and spice level.
13. Finish with torn fresh basil, finely grated lemon zest, and a small pinch of flaky sea salt.
14. Serve immediately with warm crusty bread, toasted baguette slices, or crackers.
Notes
Use ripe, flavorful cherry tomatoes because they become especially sweet and juicy when roasted. Do not over-blend the burrata mixture. Blend just until smooth and creamy so the dip remains thick and luxurious. Toast the pistachios in a dry skillet for a few minutes to bring out their natural oils and aroma. Warm the honey gently and avoid boiling it. Low heat is enough to infuse the chilli and smoked paprika. For the best experience, serve the dip immediately while the tomatoes are warm and the chilli honey is slightly fluid. A good-quality extra-virgin olive oil makes a noticeable difference because it is used in both the roasted tomatoes and burrata mixture. Mascarpone creates an especially rich and silky dip, while cream cheese provides a slightly tangier flavor. Fresh mozzarella can be substituted for burrata, although burrata provides a softer and creamier texture. If using fresh mozzarella, blend it with the cream cheese or mascarpone to create a similarly creamy base. Reduce the red pepper flakes for a milder chilli honey or add an extra pinch for more heat. Toasted walnuts, almonds, pecans, or pine nuts can be substituted for pistachios. The burrata mixture, roasted tomatoes, pistachios, and chilli honey can be prepared separately ahead of time. Assemble shortly before serving and add the warm toppings at the last minute. The dip is best served slightly warm or at room temperature, although it can also be served chilled. Serve with sourdough, toasted baguette, focaccia, pita bread, or sturdy crackers. For a Mediterranean appetizer spread, pair with olives, marinated vegetables, grilled zucchini, roasted peppers, or a simple salad. Use a wide shallow platter for an elegant presentation that keeps the creamy burrata and colorful toppings visible.
