Description
Simple Watermelon + Cucumber + Feta Salad is a refreshing, colourful salad made with juicy watermelon, crisp cucumber, creamy feta and fresh mint, all finished with a bright lime dressing. It’s incredibly easy to prepare and takes just 10 minutes from start to finish.
Ingredients
4 cups watermelon, cut into bite-sized cubes
1 large cucumber, sliced or cubed
1/2 cup crumbled feta cheese
2 tbsp fresh mint leaves, chopped
1 tbsp fresh parsley, chopped, optional
2 tbsp fresh lime juice
1 tbsp extra-virgin olive oil
1 tsp honey, optional
Pinch of salt
Freshly cracked black pepper, to taste
Instructions
1. Cut the watermelon into bite-sized cubes. Gently pat the pieces with paper towels to remove excess moisture.
2. Slice or cube the cucumber into pieces similar in size to the watermelon.
3. In a small bowl, whisk together the fresh lime juice, extra-virgin olive oil, honey if using, salt and freshly cracked black pepper until combined.
4. Add the watermelon and cucumber to a large serving bowl. Scatter the crumbled feta and fresh chopped mint over the top. Add the parsley if using.
5. Drizzle the lime dressing evenly over the salad just before serving.
6. Very gently toss the ingredients together, taking care not to break up the watermelon or feta.
7. Serve immediately while chilled. Finish with extra fresh mint and a little freshly cracked black pepper if desired.
Notes
Pat the watermelon dry to remove excess moisture and help prevent the salad from becoming watery.
Keep the watermelon and cucumber chilled for the freshest, most refreshing result.
Add the dressing just before serving to help maintain the fresh texture.
Toss gently because watermelon can break apart easily.
Honey is optional in the lime dressing.
Fresh mint is the main herb, while fresh parsley can be added optionally.
For the freshest texture, assemble and dress the salad shortly before serving.
Serve immediately alongside your favourite main course or enjoy it as a light, refreshing dish.
