Description
Sizzling Scallops with Zesty Lime Cilantro Sauce is a quick and flavour-packed seafood dish featuring golden-seared sea scallops finished with a bright, buttery lime and cilantro sauce. Ready in just 20 minutes, it’s an easy choice for a fresh weeknight dinner or an impressive meal when you want something special without spending hours in the kitchen.
Ingredients
1 lb (450 g) sea scallops, patted dry
2 tbsp olive oil
1 tbsp butter
Salt and black pepper, to taste
1/4 cup (60 ml) fresh lime juice
1 tbsp lime zest
1/4 cup fresh cilantro, chopped
2 garlic cloves, minced
1 tbsp butter
1/4 tsp chilli flakes, optional
Pinch of salt
Instructions
1. Pat the scallops very dry with paper towels. Season both sides lightly with salt and black pepper.
2. Heat the olive oil in a large skillet over medium-high heat until hot and shimmering.
3. Place the scallops in the skillet without overcrowding them. Let them cook without moving for 2–3 minutes, allowing a deep golden crust to develop. Flip the scallops and cook for another 1–2 minutes, until just cooked through.
4. Reduce the heat slightly and add 1 tablespoon of butter. Spoon the melted butter over the scallops for about 30 seconds. Transfer the scallops to a plate and set aside.
5. Using the same skillet, add the remaining tablespoon of butter and the minced garlic. Cook for about 30 seconds, until fragrant.
6. Pour in the fresh lime juice and add the lime zest. Simmer for 1–2 minutes, scraping the browned bits from the bottom of the skillet.
7. Remove the skillet from the heat. Stir in the chopped cilantro, chilli flakes if using, and a pinch of salt.
8. Arrange the sizzling scallops on a serving plate and spoon the zesty lime cilantro sauce generously over the top. Finish with extra fresh cilantro and lime wedges if desired. Serve immediately while the scallops are warm.
Notes
Pat the scallops very dry before cooking. Excess moisture can prevent a good golden crust from forming.
Don’t overcrowd the skillet. Give each scallop enough space to sear properly.
Leave the scallops undisturbed during the first 2–3 minutes so they can develop a deep golden crust.
Watch the cooking time carefully because scallops cook quickly.
Use the same skillet for the sauce so the browned bits left behind can add extra flavour to the lime sauce.
If using frozen scallops, make sure they are properly thawed and patted very dry before cooking.
The chilli flakes are optional and can be omitted for a milder sauce.
Serve immediately with lime wedges and extra chopped cilantro for a fresh finishing touch.
