Description
Spinach and Cheese Squares are a deliciously savoury bake made with tender spinach, creamy ricotta, Parmesan and melted mozzarella. Baked until golden and set, these easy squares are perfect for appetisers, light lunches, side dishes or satisfying savoury snacks.
Ingredients
500 g (1 lb) fresh spinach, chopped
1 tablespoon olive oil
2 garlic cloves, minced
1 1/2 cups (375 g) ricotta cheese
1/2 cup (50 g) grated Parmesan cheese
1 cup (100 g) shredded mozzarella cheese
2 large eggs
1/2 teaspoon dried oregano
1/2 teaspoon black pepper
1/2 teaspoon salt
1/4 teaspoon nutmeg, optional
1/2 cup (50 g) shredded mozzarella cheese, for topping
2 tablespoons grated Parmesan cheese, for topping
Pinch of dried oregano, for topping
Black pepper, to taste
Instructions
Preheat the oven to 375°F (190°C).
Heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for about 30 seconds, until fragrant. Add the chopped spinach and cook for 3–4 minutes, until wilted.
Transfer the cooked spinach to a colander and allow it to cool slightly. Squeeze out as much excess liquid as possible, then chop the spinach finely.
In a large bowl, combine the spinach, ricotta, Parmesan, mozzarella and eggs. Add the dried oregano, black pepper, salt and nutmeg if using. Mix until the ingredients are evenly combined.
Line a square baking dish with parchment paper and lightly grease it. Spread the spinach and cheese mixture evenly into the dish and smooth the surface with the back of a spoon.
Sprinkle the remaining mozzarella and Parmesan evenly over the surface. Finish with a little dried oregano and black pepper.
Bake for 30–35 minutes, until the centre is set and the top is golden brown and bubbling.
Remove the bake from the oven and allow it to cool for 10–15 minutes. Cut into neat squares once slightly cooled.
Serve warm as an appetiser, side dish, light lunch or savoury snack.
Notes
Squeeze as much moisture as possible from the cooked spinach to help the squares set properly.
Spread the mixture evenly in the baking dish for consistent slices.
Allow the bake to cool for 10–15 minutes before cutting.
Watch the cheese topping towards the end of baking so it becomes golden and bubbling.
Nutmeg is optional but adds a subtle flavour to the creamy cheese and spinach filling.
