Spinach, Apple, Cranberry & Walnut Salad with Feta and Honey Lemon Dressing

  • Author: vitalityrecipes

Description

A fresh, colorful salad combining tender baby spinach, crisp apples, sweet-tart dried cranberries, crunchy toasted walnuts, and creamy feta cheese, finished with a bright honey lemon dressing. Perfect for a quick lunch, family dinner, or holiday table.

Ingredients

For the Salad

5 cups (150 g) fresh baby spinach

2 crisp apples, thinly sliced

1/2 cup (60 g) dried cranberries

1/2 cup (60 g) walnuts, toasted and roughly chopped

3/4 cup (110 g) crumbled feta cheese

2 tbsp fresh parsley, chopped

1/4 small red onion, thinly sliced, optional

For the Honey Lemon Dressing

3 tbsp olive oil

1 1/2 tbsp fresh lemon juice

1 tbsp honey

1 tsp Dijon mustard

1/2 tsp apple cider vinegar

1/4 tsp salt

1/4 tsp black pepper

Instructions

1. Place the walnuts in a dry skillet over medium-low heat. Toast for 3–4 minutes, stirring frequently, until fragrant and lightly golden. Remove from the heat and let cool slightly.

2. In a small bowl or jar, whisk together the olive oil, fresh lemon juice, honey, Dijon mustard, apple cider vinegar, salt, and black pepper until smooth and emulsified.

3. Wash and thinly slice the apples. Toss the slices gently with a small splash of fresh lemon juice to help slow browning.

4. Place the baby spinach in a large serving bowl. Add the sliced apples, dried cranberries, toasted walnuts, crumbled feta, and optional red onion.

5. Drizzle the honey lemon dressing evenly over the salad just before serving. Start with a small amount and add more according to preference.

6. Gently toss the salad until the spinach and apples are lightly coated, taking care not to break up the feta too much.

7. Garnish with fresh chopped parsley, extra toasted walnuts, and a few additional dried cranberries.

8. Serve immediately while the spinach is crisp, the apples are fresh, and the walnuts remain crunchy.

Notes

Choose crisp apples such as Honeycrisp, Pink Lady, Fuji, or Granny Smith because they hold their texture well. Toast the walnuts for a few minutes before adding them to bring out their natural flavor and crunch. Dress the salad just before serving to keep the spinach fresh and prevent it from becoming soggy. Start with a small amount of dressing and add more as needed to avoid overdressing the salad. Use fresh lemon juice for the brightest and most vibrant dressing flavor. Keep the feta in larger crumbled pieces for a creamy contrast with the crisp fruit and vegetables. Baby kale can be substituted for spinach, or you can use a mixture of baby spinach and mixed greens. Toasted pecans are an excellent substitute for walnuts and add a slightly sweeter, buttery flavor. Prepare the dressing, toast the walnuts, and slice the other ingredients ahead of time, but keep them refrigerated separately and dress the salad just before serving. Toss apple slices with a little fresh lemon juice after cutting to help slow browning. Goat cheese, blue cheese, or queso fresco can be substituted for feta. For a more filling meal, add grilled chicken, roasted chickpeas, quinoa, or another favorite protein. Serve alongside roasted chicken, turkey, grilled salmon, baked fish, warm soup, or crusty bread. This salad works especially well as part of a holiday meal or festive dinner spread.
